Quinn & Diipali Lilburne
Tofu & Coriander Cakes
1.5 cups crumbled tofu
3/4 cup bread crumbs
2 Tbs soy milk or other noncow milk
1 Tbs soy sauce
1 Tbs lemon juice
2 Tbs fresh coriander, finely chopped
1/2 tsp coriander powder
1/2 tsp tumeric
Oil for cooking
-Crumble the tofu into a mixing bowl until finely crumbled
-Add breadcrumbs and mix well
-Add all other ingredients and mix thoroughly using your
hands
-Form into 2 inch patties
-Heat a little oil in a frying pan then add patties
-Cook each side until golden brown
-Serve with soy ginger dipping sauce
