I like hummus, lettuce, tomatoes, and pickles.
Here's another question: What kind of bread do you use for your sandwich? I usually buy organic whole wheat or multi-grain.

Same here, organic whole wheat or multigrains or multiseeds. I have also discovered Ezekial Bread (sprouted grains) Mmmmmm Yum!
I mainly use a wholemeal grain bread just from the supermarket - I looove Essene bread - (which I think is the same as Ezekiel bread) but it is more expensive and inconvenient (it isn't pre-sliced) - I am a student!!!
on organic whole grain bread, spread hummus on one side, tofutti cream cheese on the other, sliced olives and red onion in the center.
roasted: eggplant, red pepper, jalapeno, grated carrots and broccolli stalks stuffed in a pita with tahini.
I like a "grilled" peanut butter banana sandwich on whole grain bread. I like Yves deli slices with romaine, tomato, Veganaise and dijon mustard on toasted grain bread. Pita pockets - garlicky hummous, lettuce, tomato, english cucumber and radish inside a toasty pita. Baked tofu slathered in a cheezy nutritional yeast sauce on a toasted sesame bagel, with crisp lettuce and tomato.
I don't eat sandwiches that much, but my favourite toppings for bread are almond butter and peanut butter
I usually only eat sandwhiches at resturaunts. At home i stick to almond butter/peanut butter with fruit, maple syrup or raspberry jam. sometimes i eat some lightlife fake ham with mustard.
i love refried black beans though in a tortilla, pb&j in a tortilla, hummus, olive spread, portabella mushrooms on a toasted bun, veggie burgers.
oh, and lightlife bacon on toast. this is great with margarine, with a margarine/maple syrup spread, or with vegan cheese grilled up.
mmm...bacon with maple syrup/margarine. YUM!
Excuse me but vegemite is not vegan anymore, but marmite is vegan.
Is this is because it is cooked in the same tins that they cook their meat spreads in? Or is it because of a direct ingredient?
This is probably going to sound gross....but my fav. sandwich is peanut butter with veggie bacon....sooo yummy....even more yummy with pickles too :D
1. tofurkey + vegenaise + avacado slices + portobella mushrooms on toasted bread
2. pan fried tempeh + vegenaise + ketchup + saurerkraut on toasted bread
3. toasted bagel + tofutti cream cheese + portobellas sauteed in balsamic vinegar
4. roasted red pepper hummus + spinach on toasted bread
I just had a tofurkey and vegannaise sandwich on whole wheat bread, yum. :DQuote:

Hummous and sundried tomatoes
avocado and mustard
any nut butter with jam
sprouts and mustard
I made muffalettas last night. So good. It's roasted red peppers blended with chick peas. You spread that on French or Italian bread with an olive salad, sliced avocado, and sliced tomato. It's not really a quick lunch kind of thing at least not for me. I made it for dinner.
Funny that. I made a similar spread yesterday by blending roasted red peppers with ground almonds. Don't know if it's got a name though, I didn't have a recipe. I had it in a tortilla stuffed with spinach, rocket and watercress as I couldn't be bothered to cook anymore last night. An unusual, but scrummy concoction :)Quote:

I like:
In toasted sandwhich maker:
1. tufu, cheezly, vegan rashers, and onions.
2. backed beans, cheezly and onions.
3. Cheezly and tomato's.
4. Cheezly and onions.
5. Left over curry.
6. Left over curry with pakora
7. Left over curry with cheatin chicken or cheaten turkey.
other sandwhich fillers:
1. fried tofu, fried rashers, fried onions and tomato relish.
2. fried burger/pakora, fried onions and fried mushroom with tomato relish.
3. Toffetti cheazly spread and strawberry jam.
4. peanut butter and mango chutney.
5. left over dahl.
6. peanut butter and green and black chocolate.
7. Toffetti cheazly spread and tomato's.
I also like eggless tortilla in chappatii wrap's. Just fry chapati's. put lemon juice over them. Then fry all leftovers. Left over curry and tofu go particularly well. Today I've accumilated a bit of tofu, rashers, onions, chips and making waves scampi's and I'm going to fry them tommorrow. It's a very economical dish.

That sounds good. The problem with what I made was there was way too much chopping for the olive salad. Probably should get a food processor. What is rocket?
Its a kind of lettuce!
Recipe please for banana jam??.
Peanut butter and green and blacks!!!!!! sounds yuk!!!
peanut butter and banana slices in light whole wheat bread are my new obsession yummmmm :p
Peanut butter and cucumber is great. Also peanut butter and lettuce, cucumber, onion. Sounds weird but is really good!

The Tuscan Bean Spread from the Candle Cafe cookbook. With an heirloom tomato and any greens. On really good bread.
If you like that, try it with a little yeast extract (vegemite, whichever).Quote:

Peanut butter and yeast extract is also good on toast. No-one believes me until they try it...
Yeast extract and hummus is also nice...

Vegan margarine, tomato and cucumber
Cashew butter
Tofutti and Sauce
Smoked tofu and tomato
hummus, avocado, and sprouts
Anything with beetroot, and/or apple. Apple is GREAT in sandwiches, and very good for you! (although I doubt that it would work toasted). And rocket. This thread is making me hungry!
forgot to add HUMMUS, HUMMUS, HUMMUS.
my two most recent faves are:
-alfalfa sprouts and vegan mayo
-slice of nut roast, vegan mayo, cranberry sauce, lettuce, vegan gravy
Yesterday I had peanut butter and mashed banana for the first time in years. The banana was really ripe and easy to mash! Mmmmmmm it was good!!!
today i had redwoods rashers in toasted slices with vegannaise, tomatoes and mixed green leaves. salt & pepper. mmmmm
Some of my faves:
hummus, avocado, and tomato
seasoned baked tofu (I don't know the brand), tomato, and lettuce with vegenaise
cranberry stuffing Tofurky with lettuce, tomato, vegenaise, and mustard
olive hummus with cucumber and tomato with lettuce.
marinated grilled portobello on a hamburger roll with lettuce, tomato, and ketchup.

1 large eggplant
1 large tomato
1 bunch green onions
3 tablespoons olive oil
3 garlic cloves
1 jalapeno
1/4 teasponn cumin
juice from 1 lime
Slice eggplant in half lengthwise. Bake skin up at 375 until done. Skin will be shiny and crinkley. Scoop eggplant from the skin. Chop finely. Add garlic and olive oil. Add tomato, jalepeno and green onions, finely chopped. Add cumin and lime juice. Salt to taste. Leave out the jalepeno if it is to hot for you. Mix well and refrigerate for two hours. Yummy sandwich spread or very good with crackers.
How do you like your sandwich?
I like tomatoes and spinach on whole wheat bread, and then I rip it up and dip it in a little bit of olive oil.
i recently had a lot of mashed sweet potatoes left over and so i spread a thick layer of it with some lettuce and sometimes nuts or seeds onto some whole-wheat bread and i really liked it!
Yum!! That sounds really good!
