Raw vegan non-watery carbs please help

Hello all,

I have been vegan for a while and want to go raw vegan. My problem is that I cannot sleep unless I have a big bowl of oatmeal (carbs raise seratonin) first. I also have nocturia, frequent peeing at night. I have heard fruits ie bananas but they're too watery...I've also heard nuts, soaked wild rice, soaked chic peas....what do you folks suggest, again not too liquidy.

What about looking at making something like larabars?
Baking in the oven at low temperatures or dehydrator?

How about Essene bread, which is raw I think, and should be fairly carbohydrate-y?

Dry fruit?

Or eat fruit and don't drink so much ;)
