Ideas for a healthy and energizing vegan lunch
I need some good ideas for a healthy and energizing vegan lunch! But this is a little tricky... i work two very demanding jobs that drain me of all mental function and energy by the end of the day :p I don't always have access to a fridge so it can't be very perishable, I am absolutely sick of veggie sandwiches and things of that sort, and it needs to be very filling because after my lunch break I can't get home to make dinner for another 6 or 7 hours. one of my jobs is in a bakery where i have to make and serve delicious smelling non-vegan yummies all day and it makes my tummy think I'm even hungrier than I am. :rolleyes: Any recipes or ideas are greatly appreciated! I have been utterly un-creative in coming up with ideas for my food-on-the-go!

raw sushi with cauliflower? couscous or quinoa salad with dried fruit? mixed vegs with houmous and/or breadsticks? falafel wrap? naked/trek-bars? smoothies with banana, dates, oats...?

I hadn't thought of raw sushi, that's a good idea. Do you have any recipes? Quinoa salad is a good idea too! Thanx :)

I take alot of leftovers. One of my favorites is leftover sweet potatoes. I make a bunch at dinner time and take 2 for lunch the next day. I eat them unheated and spread them with a little garlic hummus. I don't like anything very cold, so I don't refrigerate it once I get to work. 2 sweet potatoes will keep me full from noon until 6:00 in the evening and that is practically a miracle!:bigsmile:

How about a bean and rice burrito with vegan cheese? or refried beans? with an avocado on the side.. french fries... vegan pizza with daiya cheese.. as someone else mentioned, falafel is pretty filling.. hummus on a pita with tomato and lettuce.. tofurkey and cheese sandwich with mustard and potato chips... fake tuna salad made with chickpeas, onions, lemon and veganiaise on a pita or whole wheat wrap.... are you able to take a cooler type lunch box with an ice pack in it? couscous mixed in with beans and vegetables also seems to fill me up, with sweet potato as a side.. dunno if that really goes together though :)
