Ooooh I haven't made that in ages, it is lovely though.
Tauhu Goreng (fried tofu stuffed with beanshoots, lettuce and cucumber w/peanut sauce), and Viking Tauhu (tofu and vegies w/sauce made of vikings). I haven't had Malaysian food before, but I definitely will be again!
I'm always on here.;) I'm making a cottage pie with brown lentils, courgette, carrots, parsnips and onions and the mash is potato and sweet potato. I can't wait for it to be ready because I know it will be delicious.:thumbsup:

I had a lovely soup made with tomatoes, carrots, mushrooms (2 kinds), onions (red and white), potatoes, chili peppers, garlic and a handful of macaroni and a ciabatta for dunking.
Chopped fresh mango. :) Is it possible to chop and eat a mango without making a huge mess? I think not.

this morning i made oatmeal with peanut butter & raisins in it - it was divine and i think it will be a new winter breakfast staple!
Last night, I made nachos for the first time since going vegan. We had to make do a little (I only have access to vegan cheese slices) but it was delicious!

peanut butter chocolate pillow cookies...they're from vegan cookies invade your cookie jar and they turned out absolutely delicious!!! I can't express enough how tasty these are, it tastes like your eating a reeses. mmmmm
I had a bunch of red swiss chard that I was looking to do something different with and I made up this great combination tonight...
Took a cup of chopped onion, two cloves of garlic minced, and a large diced up apple -- and sauteed them in a little bit of olive oil. Then I added some washed and chopped up red swiss chard and a itty bit of liquid aminos along with about a 1/2 cup of water and cooked the swiss chard until very soft... then I threw in about 2 or 3 TBSP of dried cranberries. I served this on top of steamed brown rice with some pine nuts sprinkled on top! Yum!!!! The cranberries and apples really took the bitterness off of the chard and gave it a little something extra! I wish I had thought to get a picture, but I ate the evidence already. :eek:
Black fungus. It was a little strange, but oddly moreish. And good for my circulation, apparently!
last night's homemade minestrone soup..
simmered all day on low in the crock pot. with warm, fresh out of the oven whole wheat bread..yum..and oh so good on a cold, snowy day.
Good idea Edentime. I'm going to make a healthy and warming homemade soup and toast wholemeal rolls to have with it.:satisfied:
I made curry for the first time last night, and it was really good. We had to sub chilli for ginger, but it still worked.
Fuji apple. I just absolutely DESTROYED two fuji apples. Oh my goodness were those apples tasty.
We Can't Say It's Cheese. I just POUNDED a new recipe sampled here in the office. It was a total faceplant. I'm kind of embarrassed.
A homemade vegan burger using black beans, red pepper, onion, cumin, chilli powder, parsley, basil, oregano and garlic. I had this on a bed of salad and wedged in a mixed seeded pitta bread. Served with a helping of steamed leeks, courgettes and squash with red onion gravy. Hmm mmm mmm!

I fried up a boca burger with onions, garlic and peppers. I dressed it with veganaise, tofutti cheese and ketchup.
And the sweet potato fries I made, from scratch!
I even had a pickle on the side!
All I needed was a vegan milk shake and I would have sworn I was at a diner.
I'm about to be in a sleepy lull in a few minutes. :satisfied:
Pot noodle
after training last night I had something of a slant on a naan
Made a flour and water pastry with a pinch of salt and soda left oin the fridge for half an hour to set and took out, dusted the counter and rolling pin liberally with flour and roll it out
(v. important to keep using lots of flour for this bit)
spread a thin layer of homemade chilli and then rolled as a swiss roll, then coiled the roll and then squashed flat, dusted again both sides liberally
rolled it out and kept dusting (the flour gets absorbed into it)
then heated a large frying pan with pure spread in it
fried for about 5 mins on each side on a high temp until golden brown
folded in half and wrapped in foil for later
was so tasty and yummy
Nom nom nom ... vegetable stew (spuds, onions, leeks, swede, carrots, butternut squash, soya chunks, vegetable stock, chipotle sauce) with dumplings.
Salad
Packaged salad, cucumbers, tomato, sweet peppers, grapes, olives, baby carrots, almonds, raisins, pesto sauce, creamy Italian dressing.
OMG had to take a breather between bites!
And brownies and ice cream for desert.
Beets and tomato basil soup with fresh spinach and mustard greens (totally worth venturing out in the -25 to the greenhouse for), topped with homemade sauerkraut and dill pickles all served up in a rye bread bowl fresh from the oven. mmmm - I just love food...
A smoothie: 2 bananas, 1/2 cucumber, an apple, some fresh mint and fresh basil.
Toasted sausage sarnie with tomato ketchup and 2 cups of coffee. I shouldn't have had the coffee but it was nice.:)

I just had the most amazing tostada. Brown rice tortilla that I crisped in the microwave and cut into fourths; refried beans spiced to perfection and with added nutritional yeast; a bit of raw spinach; all topped with a few toasted soybeans.
I seriously didn't know food could taste this good :)

mango. I've been forcing myself to eat fruit... I don't really like it, but this mango is yummy.
pancakes topped w/ sliced organic strawberries and maple syrup. chased down w/ chai green tea w/ creamer.
Realeat chicken style pieces, covered in 5-spice seasoned batter, and deep fried. With sweet and sour veg and brown basmati rice.
Surely the veggies and brown rice negates the deep fried badness.
Strawberry/banana smoothie with plain soy yogurt. SO good :D
