dinner: Aloo Gobi (red potato, carrot, onion, tomato, cauliflower, chickpeas with turmeric, garam masala, cumin, cinnamon, pepper, ginger) and a glass of almond milk.
I made the entire dinner for Easter at my Mom's with my sister and husband:
lentil/vegetable loaf with homemade bbq sauce; white basmatti rice with chopped mango and shredded carrot and spices; gluten free skillet cornbread (for Mom); gluten free double chocolate brownies and I had my first taste of So Delicious coconut milk vanilla bean flavored ice cream. Expensive but worth the treat!

Lunch: Millet bread topped with hummous, sliced avocados, tomatoes, onion and pickled red cabbage.
Dinner: Sausage (Linda Macs), bean and veg stew with kale colcannon.
Dessert: Fresh sliced indian mangoes, with Swedish Glace ice cream and plain chocolate drops
Snack: Hummous and chilli sauce with seeded flat breads, roasted red peppers, chargrilled artichokes and olives.
Bit of a stodgy icky day...must do better!

Did you make the millet bread? I am wondering if it was gluten free. I am thinking about making GF vegan millet bread for my Mom for Mothers day. I have never had it before and have never tried baking a gluten free flour yeast bread (though I have made hundreds of whole wheat loaves). I am almost afraid to try but I have been wanting to attempt this one for a while. I would love to hear your experience with it. Thanks!

I realise now that I overdosed on rice today.
Yesterday - weetabix and soy milk, houmous/spinach/tomato pitta bread with avocado and alpro soya chocolate desert, wholemeal spaghetti with homemade sauce (lentils, tomatoes, celery, carrots all blended). Then an entire bar of dark chocolate to get me through a night of revision.
Breakfast: Cranberry and raspberry porridge with peanut butter
Lunch: Salad and an apple
Snack: Wholewheat blueberry mini muffin
Dinner: Salad with roasted gluten in hoi sin sauce, crackers and houmous
Snack: Licked the bowl clean after baking a carrot cake! Few spoonfuls of vanilla frosting (for taste testing purposes, of course!)

Lunch: Apple, houmous sandwich, blackberry yogurt
Dinner: Shepherds pie, plum, veg, custard with almond milk

How's your gluten free diet coming LouiseAbel? Do you find it is making any difference?
I tried totally gluten free for a while and didnt find any difference, but when I reintroduced gluten man did I have diarrhea and food cravings but only for a short time. Weird. My Mom has Celiac (she gets skin rashes, headaches, nausea fatigue from consuming gluten) but I was tested in 2006 due to family history (I had both blood tests and endoscopy with biopsy of intestinal tract) and all was negative. Still I do find that when I stick to less wheat and gluten in my diet I have less food cravings for crap food. Your meals seem pretty dang tasty considering!

this morning I just had a huge bowl of steel cut oats i had put in the crockpot last night with chopped apple and raisins. Shared some with my omnivore husband and he loved it (though I had to load his with added sugar...it's the only way I can get him to eat anything healthy). Soooo good!

That dinner was sublime! My husband couldn't even tell it was vegan, and didn't even miss the cheese.

Thanks for asking, Robinwomb. =) I'm not sure whether it's made a difference. I mean, I know when I have cut out wheat my skin has improved (I've been suffering with itchy skin all over my body for about 3 months now... Sounds silly but it's really ruined my life for that period of time) but I can't be sure that it's definitely the wheat. Also, it doesn't cure the itchiness 100%, so I think possibly something else is a factor. (My doctor originally thought it might be scabies so it could still be that I suppose). I only gave it up for a week last time and I'm trying two weeks to a month this time and have only done 5 days so far so we'll see if it's better after a month!
