Did you follow the recipe exactly?
I must confess that I substituted agave nectar for the brown rice syrup and vacuum-packed tofu for the "regular" kind. Perhaps that's why mine didn't seem as good as yours. It was still very good though. :)
I didn't follow it exactly Sponge as some ingredients are a bit trickier to get hold of where I live.
I had to use cornflour instead of arrowroot, rice syrup instead of brown rice syrup and I used mori-nu firm silken tofu in the tetra-pak, as I wasn't sure whether it was supposed to be soft or firm silken the recipe uses so I plumped for the firm:)

where did you get your rice syrup?:confused:
I found brown rice syrup yesterday at a regular supermarket. (Safeway - not sure if they have that store where you're at.) I was shocked because I thought I would have to go to the health food store to purchase it.
Huh.....there's no way Safeway would stock anything like that up here :( It's more of a specialised "health food" up here I would say.

lol, I think enslaving fairies for the purposes of vegan cooking is a bit of a contradiction ;), I am lucky though cause I know some peoples families are opposed to their veganism never mind cooking for them :o

So what's vital wheat gluten, and what can UK people use instead? (Sorry if someone else has asked this already, but 8 pages is tooooo long to trek through).
vital wheat gluten is the pure gluten powder... if it's for seitan, you can make it out of flour, but that's a pain in the ass. I haven't seen it in stores in Europe either.
But you could ask at some bakeries- they usually have tons of the stuff- or order online.
Thanks Pavotrouge - I wanted to make the chickpea cutlets that everyone was raving about. Do you reckon it would work without the wheat gluten? Or maybe with flour/strong bread flour instead?
I think some people over at the PPK forums substituted glutinuous rice flour, maybe that would work for you.
But there's no 100% substitute for gluten powder IMHO.
ended up making the burgers tonight instead cuz we were too tired. the bf made them and he seems to think bigger is better (men :p) so they turned out like mashed potatoes with a crunchy shell. kind of bland too. satisfying though. adding a bit of extra salt and some liquid smoke helped. oh well. next time.

So I tried the chickpea cutlets last night, they were way to yummy....mmmm, it was the first time I have ever tried a recipe or anything with vital wheat gluten, as i have never tried seitan before. it was interesting and yummy to say the least.
The food is just too yummy!... I made the choc-chip and walnut cookies last night and i've eaten way too many today :(
Uh ive just made those today... they are good.. but ive would have prefered them more crispy.. maby I should try to bake them a little longer
