Two cups of tea with oat milk
Penne arabiatta with pine kernels and pumpkin seeds

And, so far, about seven glasses of water (sadly, because I was a little hungover, rather than because I'm virtuous)
For dinner, I'm making potato and kale enchiladas with refried beans and/or mexican-style millet for my housemates, because it is My Turn.
I'll probably buy and scoff some dates, too.

So far today......2 oranges - about a cup of steel cut oats w/ dried cranberries - and 1/2 of a 32 oz smoothie w/ kale, spinach, lemon, ginger, cucumber, celery, apple, chia seeds and psyllium husk. For lunch I will be eating a small spinach salad w/ mushrooms, green onions and tomato and a small serving of a vegan shepherds pie. Tonight is vegan pizza w/ green pepper, onion and mushroom.

Over th last couple of days I've been eating lots of yummy Christmas treats that my family made especially for me... scones, apple crumble, banana-walnut bread, chocolate tiffin, mince pies and nut loaf en croûte :D

Today I am off to an okay start. I have had 2 oranges and a banana and about to take my first drink of my 32 oz smoothie w/ kale, spinach, lemon, ginger, cucumber, celery, apple, chia seeds and psyllium husk.
For lunch another salad ... just like yesterday .... followed by a small serving of vegan green bean casserole.
Afternoon snack will be a red quinoa salad w/ green apple, sliced almonds, red onion, cilantro, cranberries and a balsamic and olive oil dressing.
I am still trying to figure out what I will make for dinner. Likely it will be veggie tacos but I want to figure out what all the options could be before I commit. :p

Magnificent mushroom mash (that's what I call it anyway!) - mashed potato packed with mushrooms, onions, red pepper, herbs and spices (fried up last night and taken to work today for my lunch) with mixed beans in tomato sauce

Nut cutlet with chips, green beans and my own "meaty-style" gravy
And a regular flow of tea throughout the day... including some now, with a date and walnut flapjack :p

Apart from being vegan I also avoid refined/added sugars (except for minute amounts in ready made sauces or whatever, below 6%), sweeteners, MSG, caffeine, and alcohol. But as you'll see I'm still a bit of a foodie and have a sweet tooth or three...
Yesterday:
Brekkie= Porridgey-type thing made of oats, banana, (fortified) rice milk, and Sweet Freedom syrup (made from apples, grapes and carob).
Lunch= 4 vegetable spring rolls (they're tiny), salted tortilla chips (made by Kettle Chips), fruit bar, glass of apple juice.
Snack= Sunita grape juice and sultana Halva, glass of rice milk.
Din-dins= Indian curry with Realeat Chicken style pieces (which I tried for the first time and yes they were very realistic, but is it just me or do others feel kind of odd eating something that is too reminiscent of meat?), with rice, and a bit if homemade chapati. Also a couple of poppadoms. I didn't get the sauce as spicy as I usually do, so didn't eat it all, and gave myself the perfect excuse to have another;
Snack= a huge chunk of Everfresh banana cake. Om-nom-nom-nom!
Oh yeah and lots more apple juice with dinner/cake. ;)
Today:
Brekkie= 2 pieces toast with cashew butter and St. Dalfour raspberry jam, glass of rice milk.
Lunch= chip butty (from local chip shop where they prepare the meat separate to the chips, and using sunflower oil spread on the bread), glass of Feel Good (fizzy fruit drink).
Snack= Kallo salt and vinegar rice cake, and a handful of Sunmaid raisins (the best as they don't have blasted glazing agents on them).
Din-dins= Stir-fried tofu, onion, tomato, carrot, mushroom, pepper, and bean sprouts with rice noodles, huge glass of apple juice.

Heya Peabrain, we definately have a thread about that somewhere. My answer in short is that there is nothing wrong with 'meat-style' products, they're just beans, wheat and seasoning.
