does anyone have any good guacamole recipes? i just got two organic yummy avacados :)
A little salt. Some pepper. A few table spoons olive oil. The juice of half a lemon or less. A little garlic. Maybe some rice or soy milk, or soy creem - or maybe not.
Oh, and one avocado.
But be careful. It's addictive! :)
oh my i know i could eat it by itself lol
If your 'what I ate today' is anything to go by, I'm sure you could find a few fries to dip into it ;)Quote:

LoL :D
No, please no... don't put soymilk or silken tofu in your guacamole.. that's just not right.
Oil isn't needed either.
My guacamole only has avocado, the juice of one lime (no lemons - it makes it funnytasting), a bit of salt, a little pepper, about 1 clove or so worth garlic and some El Pato to give it spice (don't add too much or you'll thin it down). You can also use canned jalapeno juice for the heat, but I like the El Pato better. Mash with a fork until it's somewhat creamy, somewhat chunky. Eat with anything humans can consume.
Sometimes, if I'm feeling extra fancy, I'll put in a half teaspoon of cumin, a roma tomato chopped up, and a bit of fine diced onion.
ETA: if you don't have El Pato, then just use about 1/8 teaspoon of ceyanne pepper.
and cilantro. never forget the cilantro. yum.
i actually hate cilantro but its good in guacamole =D
Yeah, I've heard of people like you ;-) ... I always think that's weird, until I remember that I hate eggplant (excepting baba ghanoug!).Quote:

Have you ever tried an indian curry with eggplant? I don't think you have :)Quote:

Hm, no, you're right -- I haven't. But I will sometime ... always open to expanding my palate! :)Quote:

I'm a weirdo but I like to add soy sauce to mine.
Or Braggs :DQuote:

I make avocado spreads of all sorts but they aren't really "guacamole"..."guacamole" is in my top 2 favorite though!
I usually just mash up an avocado and add salsa to it. It turns kind of a funky color, but it's yummy. :)
Rowan, I do the same thing! It's lazy goodness... and Paul-approved! (He's my son--2 yrs. old.) :)
Instead of traditional corn/tortilla chips, I like to eat mine with pita bread.
I'll eat guacamole or avocado spreads/dips on ANYTHING edible!
It tastes good on toasted Ezekiel bread mmm mmm.
I love to eat mine on red bell pepper strips. :)
Oh, CC... tried some Bragg's in mine today--yum!
i like to make my own but if i cannot b bothered ido this aswell!Quote:

Roasted Corn Guacamole
3 hass avocados, peeled and coarsely chopped
2 ears corn, roasted and kernels removed
1/2 red onion, finely chopped
1/4 cup coarsely chopped cilantro
1/4 cup fresh lime juice
2 tablespoons Tofutti Sour Cream
Salt and freshly ground pepper
Combine the avocados, corn, onion, cilantro, lime juice, and sour cream in a bowl and mix well. Season to taste with salt and pepper.
Sometimes I like to chop 1 garlic clove in my guacamole. Yum!!!!
Try this recipe with guacamole.
Black Bean Taquitos
12 corn tortillas
1 cup refried black beans (can substitute pinto or other beans)
1 1/2 cups light flavored olive oil
salsa
guacamole
Tofutti Sour Cream
Directions:
Heat olive oil in a pan at low or med-low heat for 2 minutes or until hot. Microwave tortillas for 45 seconds.
Scoop 1 – 1 ½ tablespoon of beans on each tortilla one at a time and roll into a thin taquito (about a ½ inch diameter).
Fry, 3 at a time, with tongs for about 4 minutes, turning every minute.
Place on plate lined with paper towel to drain excess grease.
Use sour cream and guacamole as dipping sauces.
YUM!
I LOVE rolled tacos but can't bring myself to use even HALF as much oil
Not even Olive oil?

No, not even olive...I don't fry with olive oil or use that much oil for cooking anything...I can't bring myself to do it :o
I detest the taste of oil, absolutely detest it and it leaves a horrible clingy type feeling in your mouth. Strange, as I smoother Pure margarine very thickly onto things :o
Well, maybe you are better off. I am not a big fryer myself. But I do think olive oil has some health benefits.

Me too! I just use it in small amounts and unheated for it's health benefits. Also I really LOVE to eat olives themselves and used to buy unsalted Peruvian olives but they aren't available anymore :( I LOVE salted olives but avoid salty things in excess as well so I am really hoping the olives become available again soon.Quote:

Please know I am not criticizing you or anyone else who eats fried foods at all. I was simply commenting on *my* preferences. I LOVE deep-fried food but can't bring myself to fry foods! I also love fats in general, so much that I have stopped buying Earth Balance because EVERYTHING tastes better with it! I mean it, my family could go through a tub a week! We just have it in the house when I am doing a catering gig and that's it.
I never thought that for a second.:)

Mmm, I love fried stuff and I generally indulge! :)
Me too. Tofu and poppadums and crispy noodles and spring rolls and samosas...mmmm
I made guacamole tonight (just avocado, lemon juice (lime looked a bit past its best) salt and pepper). Avocados are fantastic.
Anyway, I made chilli for my mum and sister, and my mum had never had guacamole before!!!! I had pinched the avocado from her fridge to make it and she was a bit peeved at first (in an extremely comical and rather tipsy sort of way) but she changed her mind when she tried it :D
This is a "10 Second Guacamole" Recipe that I found on vegweb.com
Mash 1 haas avocado with a fork.
Add big spoonful of spicy salsa.
Squeeze one lemon slice over it.
Mix.
yes, and this is why i call it crack-a-mole...Quote:
ConsciousCuisine
mmmmmm....
i must mention that crackamole is one of my top ten food fight foods. :D
strangly enough salsa and hummus are in there too!
Something interesting: Even though avocados are fruit, each one has 25 g of fat! But it's the good kind of fat, so it should be ok.
Sometimes in "mixes" for making guacamole I see dairy. Is it common for guacamole to be nonvegan? Because in my cafeteria at school there is usually guacamole available as a condiment, and I always assumed that it's just avocados, spices, etc. I should probably ask to make sure it's vegan. God, people put dairy in EVERYTHING these days... it's ridiculous.
I sometimes like to add cumin, oregano and paprika.
We used to live on the border way down south in TX and we'd eat in Mexico on the weekends. They'd make this to die for Guacamole salad...
Avacodo mashed
Tomato chopped
Onion chopped
Cilantro
juice 1/2 lime (or whole key lime)
Serrano pepper chopped (this gave it a different flavor than the jalapeno)
They'd bring it out with everything separated on a plate and we'd mix it together ourselves and add salt to taste. I didn't like guacamole much before and now I'm an addict. :D
Am I the only person who doesn't know what on earth cilantro is?
In other news, anything made from avocados is sex on a plate.
It's coriander.
I make guacamole by blending together avocado's, garlic, lemon (or lime) juice and salt & pepper
If you want your guacamole to last longer then blend in some spinach leaves, it stops it from discolouring so it can last you a few days.
