I veganised this

Swaps were
125ml semi-skimmed milk = Soy Milk
50g butter, melted = Pure Soya Spread
1 large egg = Used allergycare egg replaced
3 tbsp freshly grated Parmesan cheese = Used a mix of dairyfree parmasan sprinkles and a bit of soy chedder.
They were awesome :)
You can pretty much make any nutloaf recipe into a nutmuffin recipe by shortening the cooking time and cooking it in muffin cups.
I went though a stage of batch cooking and freezing things down. I don't know why, but it always gave me the giggles to eat nutloaf muffins. There's just something so cute and retro about it.
I remember once serving my husband a meals with the centrepeice being a savory muffin topped with mushroom gravy that I'd blended some spinach in to make it green, and a spring onion burried in the top as a candle. I even cut a diamond of red pepper to look like a flame.
I don't get out much....

I'm going to get hold of some vegan parmesan and make these. They sound delicious!

There is a peanut cupcake in vegan cupcakes take over the world. I made it and forgot to add the sugar. It made a really great savory muffin which was lovely for breakfast with pure.
