Re: Vegan Bento (Japanese-style packed lunches)
is there a recipe to share for the casserole, jambox?
I've been very lazy about bentoing the past couple of weeks, but here's one I'm proud of:
mixed salad (baby spinach, mushrooms, tomatoes and mixed seeds) and seitan gyoza :)

Re: Vegan Bento (Japanese-style packed lunches)

Re: Vegan Bento (Japanese-style packed lunches)
I am sooooo impressed by the creativity! I have been longing for a laptop lunchbox since I have been reading this blog:
http://veganlunchbox.blogspot.com/
I am going to order one next payday!!
-
Re: Vegan Bento (Japanese-style packed lunches)
All these lunches look wonderful! Hopefully I can post some soon- I've just ordered a laptop lunchbox! I normally have tupperware with mini-tupperware inside, but it's a pain to arrange them all and make them fit, this looks so much better! :)

It's called Creamy Chickpea-Tahini Casserole, on vegweb. Try this: http://vegweb.com/index.php?topic=6080.0
Although, I didn't eat it that day. It had been frozen and apparently frost-bitten, because the texture was really gross. I hadn't really thawed or heated it though. It's great fresh!
I'll take Pavo's gyozas and Est's grilled veggies please!
Today: bbq tempeh sandwich w/ onions & peppers, grilled corn, carrot & celery sticks, roasted garlic dressing, grapes down the side
http://i28.photobucket.com/albums/c2...hes/3-3-08.jpg
-
Re: Vegan Bento (Japanese-style packed lunches)
yum... bbq tempeh!
ta for the recipe.

Re: Vegan Bento (Japanese-style packed lunches)
my new lunchbox and the contents for enjoyment tomorrow:
http://img153.imageshack.us/img153/3...3081318gb9.jpg
Cucumber, peppers, red onion and cherry tomato salad
3 veg spring rolls
Serving of wholewheat noodles
Baby carrots and rasins (in the little boxes)
(516 calories)
And the mini tub has soy sauce :) Simple, but hopefully nice!!

Re: Vegan Bento (Japanese-style packed lunches)
these all look so ace! ^^
what i don't get is how you can put all that stuff together and take it to work or wherever..and then when it comes to lunchtime, all the nicely compartmentalised stuff isn't all jumbled up together in one fantastic globulised mess

each bit has its very own little lid :D
P.S. someone buy me one for my birthday/wedding :D
-
Re: Vegan Bento (Japanese-style packed lunches)
Not every compartment has a lid, just one larger one and the teeny one. The lid of the box closes pretty tightly though, so unless there's something runny in there or you're playing hacky sack with your lunch, everything will pretty much stay in place.
Today: the makings of a taco salad - leaf lettuce, cilantro, refried black beans, salsa & nacho sauce layered, baked multigrain tortilla chips, guac
http://i28.photobucket.com/albums/c2...hes/3-4-08.jpg
Tomorrow: wheat orzo w/ marinara, broccoli steams & toasted pine nuts, sauteed broccoli, half an apple, apple fritter, grapes

Re: Vegan Bento (Japanese-style packed lunches)
Mine seems to have survived the journey to work, even the noodles :)
In case any UK people were wondering, I ordered mine for £13 from http://www.beckyandlolo.co.uk/, and I got it the very next day!

Re: Vegan Bento (Japanese-style packed lunches)
And for tomorrow:
http://i270.photobucket.com/albums/j...60308_1218.jpg
560 cals this one.
Lentil Dahl, 2 veg samosas, pitta bread slices, Bahji, tomato / carrot/ cucumber and in the little pot are some rasins :)

I think you're asking for the recipe? It's not a recipe really, I made bbq sauce (still tweaking that recipe), bought the tempeh pre-sliced, marinated in the sauce for a half hour or so, then grilled it.

Re: Vegan Bento (Japanese-style packed lunches)
And for tomorrow... :)
http://i270.photobucket.com/albums/j...nto/bento3.jpg
Cucumber stars & hedgehogs, peppers, lettuce
Pitta, dino carrots, Cherry tomato
4 Spring rolls
Orange
Little pot = salad dressing

Re: Vegan Bento (Japanese-style packed lunches)
Dino carrots! Cute.
Tomorrow: bbq tempeh pizza, garlic snail, broccoli, marinara & roasted garlic dressing for dipping

Re: Vegan Bento (Japanese-style packed lunches)
wow, your pizza looks so yummy :) I haven't tried using BBQ sauce on a pizza since being vegan, I have no idea why. I bet it's lovely with all those veg. mmm. *adds to list of things to try*
-
Re: Vegan Bento (Japanese-style packed lunches)
i'm in love with this thread, i almost wish i had a job to go to which involved taking a packed lunch!
did you use cookie cutters for those veggies !! ?
-
Re: Vegan Bento (Japanese-style packed lunches)
Yep, little mini ones. They were from cccshop.co.uk, they have buy 3 get one free sale thingy at the moment :D
There's no way I would have the patience to carve carrot sculptures, LOL!
-
Re: Vegan Bento (Japanese-style packed lunches)
@ !! - I think your bento boxes look ace :D Great idea with the cookie cutters.
Waiting to upload my next piccie.
Jamboxrock, I *know* this is going to be a silly question somehow :o but... garlic snail...? How do you make one of those?!
-
Re: Vegan Bento (Japanese-style packed lunches)
Est, I kind of made them up hoping for good results. Stretch out a small piece of pizza dough into a long, thin rectangle, spread with minced garlic, roll up like a cinnamon roll, and bake alongside the pizza. They would have been way better with some eb or almond parmesan on the inside, but I was rushing.
-
Re: Vegan Bento (Japanese-style packed lunches)
Well it looks fab, I may experiment with this :)
So here's day 5 (Thursday):
http://i4.photobucket.com/albums/y12...nto/Bento5.jpg
and day 6 (Friday):
http://i4.photobucket.com/albums/y12...nto/Bento6.jpg
(Roasted red pepper hummous in the dip tub and a few squares of Montezuma dark choc with orange down the side!)
Each day I took a few vegan choc chip cookies for morning and afternoon tea breaks.
Several other delegates on the course have taken the web address for becky and lolo to buy their own lunch boxes! They thought mine looked v healthy and delish. I also managed to share some of the benefits of being vegan and they seemed interested and asked quite a few questions. You never know what these boxes may encourage them to try!

-
Re: Vegan Bento (Japanese-style packed lunches)

Once again jambox, you have excelled! :)
-
Re: Vegan Bento (Japanese-style packed lunches)
do you make all these cutlets, cake, sausages, casseroles etc jambox?? if you do you are superwoman indeed **bows down**. :) do you buy and eat pre-made things like sausages, cutlets etc?
-
Re: Vegan Bento (Japanese-style packed lunches)
Thank you, thank you. *takes a bow*
:)
I do make most of what you see in the lunches. I live alone and tend to make full recipes, so I eat off the same things for a couple days in a row and often freeze extras. The sausages were made last weekend for a brunch. The cutlet I made a double recipe a couple months ago and put extras in the freezer for such an occasion as today where I needed a bit of protein to round out a meal in a pinch. Casseroles I tend to make, eat a few servings, and freeze the rest for easy future meals. I did not, however, make the chocolate kahlua pie which is finally gone. A friend brought that to my brunch and then left half with me!
I do eat pre-made faux meats every once in a while, when I just don't feel like making them or don't have the time. But I much prefer to make things myself.

Re: Vegan Bento (Japanese-style packed lunches)
Wow Jambox - you are one talented woman. You could give veganlunchbox.com a run for her money :)

Where did you buy it?
-

wow, you two are bentoing a lot (I just made up that verb).
I've been lacking inspiration lately, and am sooo happy that a parcel with some new bento goodies arrived today and can be picked up tomorrow morning.

Yeah, for me it's not so much inspiration as that I have to take a lunch everyday or I'll be having french fries and a dressing-less salad. It'd be fun to get decorative sometime though.
Tomorrow: jerk tempeh, brown rice & peas, steamed collards, lime wedges, baby carrots, prunes & dried pineapple
