Single Serve Cookies - Better recipe wanted
I'm looking for a small batch recipe for cookies... I have a really lazy single serve skillet recipe which is this
1 Tbs Peanut Butter (Crunchy)
1 Tbs Oats
1-2 Tsp Sugar
1 Tsp Moisture of choice - Mylk, agave etc (I've found sourdough starter kicks booty here!)
Chocolate Chips or Raisins if you like
Microwave (If they don't scare you) the peanut butter to make it a little runny, or pop the jar into a bowl and surround with hot water
Dump ingredients into a bowl... mix.
Dump into warm skillet... cook until it looks a bit gummy, flip. cook some more.
Take out and let cool for a min... spinkle with some sugar to cover the burnt bits (there may well be many!)
Makes one medium or two small cookies.
It's not a great recipe..... it's more a 'I want cookies but don't need a whole batch' kind of thing! You would also do this on a baking sheet, but I don't have the oven on often.
So, anyone else got some small scale cookie recipes? All the ones I seem to see make at least a dozen.
Since it's just me and Mr Derious at home, I they tend to go off before they are eaten, or worse still, I freeze them and then have to eat dissapointing defrosted cookies for weeks (nothing worse than soggy cookies, at least dry ones you can dunk!)

Try freezing the unbaked dough in single portion sizes, then use them as you need them . They seem to cook up quite well when I do that.

Couldn't you halve or quarter the ingredients for a recipe for a larger batch of cookies?

Hehe. The 'single serve' things doesn't compute with me :) Could you make a big batch and then put them in the freezer? I used to do that with Peanut butter ones.
edit: or just be greedy like me and eat all of them :D
