Broccoli Tofu with peanut sauce - to die for
One of my favorite recipes right now that I can't get enough of. EASY!!
1) make the sauce: combine 1/4 cup all natural peanut butter, 4 tbs soy sauce, 3 tbs water, 1 tbs crushed garlic, 1 tbs sesame oil, 1tsp vinegar, a little bit of cayenne pepper if you want - set aside (VARIATION - use 1/2 C peanut butter and 1/2 cup hot water)
2) steam one head of brocolli, cut into bite size pieces (I like lots of broccoli). I like to partially steam it so it's still a little crunchy
3) cube 1lb tofu into bite size pieces and brown in oil (I like sesame oil)
Brown tofu, add steamed brocolli and sauce, toss well and serve over Brown rice! you can add some chopped cashews or peanuts on the top if you want. yummy!

I am going to try that too! Minus the garlic, I dont like that:)
