ur leftover mash idea sounds really good too! some people just turn their noses up without trying it and it's often really good... (kinda like tofu)

i think i saw some date preserves once, i wanna get some. i should get into making preserves and canning and stuff, then i'll have loads of yummy fillings all year round, but my mom always says she "doesn't know if it's a good idea" cuz it takes a lot of time i always ask what else i'd be doing...sitting on a forum?? (not that i wouldn't still be here :D )
I like red pepper tartex on toast. And the olive one's good too. I like tapenade too.
I like peanut butter but not mixed with anything else. (No margarine either.)
Love sandwiches with avocado, grilled mediteranean veg (no mushrooms though, yuck yuck yuck), hummus, rocket, spinach, falafel, smoked tofu...

Pita pocket, vegan cream cheese (don't be a wimp and skip out --- use generous amounts), sliced tomatoes, LOADS of parsely=Orgasm sandwich.

One of my favs is mock tuna salad. I use food-processored garbanzo beans (aka chick peas, ceicei beans) in place of the the tuna. I make it with chopped fresh parsley, onions, and a few splashes of hot sauce. On whole-grain bread with veganaise and tomato it is SO yummy.

- Tofutti cream cheese mixed with peanut butter and topped with sprouted mung beans

- peanut butter and apricot jam...yuuuuuuuuummmmmmm
- Chocoreal (the swirly one) and sliced bannana

Now when it comes to sarnies, the bread is very important. Mine has to be wholemeal but i'm often tempted by bagels, too..........Mmmmmmmmmmmmmmmmmmmmmmmmmmmm toasted bagels with banana and cinnamon and maple syrup.........:p Gosh, i've come over all funny.

i'm not sure if i put it here before, but i really like tahini with tomato slices either in pita or on bread (whole wheat of course, i've come to really only like the taste of whole wheat)

since christmas day i've been enjoying my luxury almond & cashew nut roast loaf (with herb stuffing) ;) mashed into a sandwich with some sliced tomatoes and picalilli or sweet pickle.

yummy bean spread
stir together 15 oz can fava beans and 15 oz can garbanzo beans (or your choice of beans), 2 Tbs lemon juice, 2 Tbs olive oil, 2 finely minced garlic cloves. Bring to a boil, then reduce heat to low. simmer 20-30 minutes, occasionally mashing the beans. (optional- sprinkle in some cayenne pepper and/or diced chilis) Serve when not quite pasty yet. this is good on pita bread with tahini or vegan dill dresing, lettuce, thinly sliced red onion and tomato.
If you're into the taste of almonds and cashews, you should definitely try hazelnut butter one day (unless you are afraid of becoming addicted.... I am!)Quote:

i made a kind of crazy concoction last night for dinner, sweet and savory, and i was a bit worried that it wouldb't turn out, but it was delicious! i am excited about this becuase i have been playing around with things lately because i hope to open a restaurant someday and write a cookbook. :D

I found a recipe recently for something that can be used to make grilled "cheese" It's a bit runny, but very good, and if you don't feel like getting a pan all messy with it, you could always toast the bread and put the stuff in the middle, since it's already like a melty grilled cheese. :D mmm. here's the recipe if you're interested:
12 ounces firm silken tofu
3 tablespoons Nutritional yeast flakes
2 tablespoons Sesame tahini
2 tablespoons Lemon juice
1 1/2 tablespoons Light miso
1 teaspoon Onion powder
3/4 teaspoon Salt
1/2 teaspoon Paprika
1/4 teaspoon Garlic powder
1/4 teaspoon Dry mustard
1
. Place all ingredients in a food processor fitted with a metal blade. Process until smooth, stopping every so often to scrape down the sides.
2. When smooth, pour into a storage container and cover. Chill for several hours to allow flavors to blend. Keeps for 7-10 days in refrigerator.
3. This has many uses…serve on toast, use in sandwiches in place of dairy cheese, use in vegan grilled cheese sandwiches, and more.
Plus it's good as a dip for veggies and stuff too!
tigerlily, check out these cheese recipes, theyd all work great for grilled cheese sandwiches. on the second page, theres one for "montery jack" cheese that was said to be very good.

Hey !
Just finished munching away a huge packed lunch and still could eat more. I need too much food - it is getting a bit of problem.
Anyway my question was: Do you have any filling suggestions for sandwiches?
I am fed up of the mock meat slices and need something quick and easy.
Was thinking sliced tofu plus salad. Suggestions from the wise pls.
When I'm feeling really hungry I'll have vegan sausage sandwiches with some salad veg and maybe some hummus or other non-dairy spread - very filling as is falafel pitta bread.Quote:
