    The lime version is my favourite but it's more time consuming because you have to use a zester to get the zest form the lime which is a bit fiddly. Glace cherries also go well with coconut.

    This is a cake I make regularly.


    Lemony coconut cake

    8oz self raising flour
    2 tsp baking powder
    2 oz desiccated coconut (more if you want it really coconutty)
    4 oz sugar
    4 floz veg oil

    If you don't like the taste of the flax oil you can buy gelatin-free capsules, but they work out more expensive....
