im sure i already posted this in here a good while back but these were lime coconut cupcakes we made from hethe book....
don't forget that if it all gets too much to faff about doing individual buns, you can just bung the mixture into a cake tin and make it into a cake..the recipes are so easy though...
could always just use peppermint essential oil in a drop of veg oil?

coconut lime cupcakes with lime buttercream frosting. they're really nice..sort of chewy but waaaay too sweet. definately a one...

i already sussed the ludicrous recipe quantities seem highly unnecessary :eek: i think they look amazing, true, but a small swirl with other stuff plonked on top or...
soz poison ivy..i know this post is yonks old..was thinking you could pop in a vanilla pod into a cannister of sugar thats' 'specially' ;) set aside for making cupcakes..then you have a constant...
um..haven't perfected the frosting recipes yet...i'd say it was quite close to the choc buttercream frosting.. it's 'pure' soya..icing sugar, bit of soya milk and vanilla extract and cocoa powder...
aha..my first ever baking session from this book. these are to welcome my best friend home from her 3 week camping expedition...she'll find them in her fridge alongside a chilling bottle of chenin...
okay.my copy of this book is on it's merry way round to my house..should be with me by the end of the week..soo, by the end of the weekend i ought to have perfected at least one...
