    For probiotics I use Co-Yo, which is a 100% vegan coconut milk yoghurt (although I don't know exactly how one would extract it for use in the lemonade)...

    Yep! It's strong flavoured so you don't need a lot, it's good on pizza, but it's also good cold and used like a spread. I usually use a vegetable peeler to slice it as it's too soft under a spreading...
