Last time I checked Starbucks used a specially-formulated Silk product? As far as I know, it's vegan.. but don't take my word on it, I've hardly ever been there, heh.
The Student's Vegetarian Cookbook has some microwave recipes. The Garden of Vegan also has a specific microwaveable section for students. :)

Definitely contact whoever creates the menus in the school's cafeterias or whatever they have. It's worth a shot! Besides that, bring your own lunch. It's easy to slap together a few fillings...

Last night I tried acorn squash for the first time. With applesauce, cinnamon, and walnuts, it was delish!
I love them! Especially when grilled or roasted. Spongey fried mushrooms, not so much. Portabello mushrooms are fantastic!
