Yes, blanch it to put it into boiling water ... make sure it's really bubbling before you put them in. Then refresh them by plunging them into very cold water...
Peel it before adding it to the pan. It's easier to peel a butternut squash if you cut it into smallish chunks first ... don't try and peel one intact! :bigsmile:
A Nigel Slater recipe
serves 4
2 medium onions, chopped roughly
3 tbsp groundnut oil
Sauté until soft but not coloured.
serves 6
3 tbsp tamari
2 tbsp olive oil
2 tbsp water
1 clove garlic, crushed
10 drops Tabasco
300g tofu, 18 cubes
this is a Cranks recipe ...

c900g squash, cut into 8 segments
2-4 cloves garlic, unpeeled
2 small red onions, quartered
no, don't peel it to roast it ... just cut it in half, cut criss crosses (don't go through the skins), then drizzle with good olive oil and roast. You could stuff it before roasting it as Fiamma...
Pumpkin would be just as scrummy ... or sweet potato.

7 medium shallots, chopped

Don't wait until Spring to get going .... you can plant garlic, onions, shallots, broad beans, etc in Autumn. It's really encouraging come the spring and the really big sessions start to already...
