I wouldn't use soy flour myself, but you should be able to pick up gram flour at Indian shops :)
Gram flour is good for making omelettes too - they come out more like omelettes rather than the scrambled tofu mentioned above.
Just mix some gram flour with water, heat the oil, add your choice...
There's a few here, particularly the last 2 should give you plenty of ideas. I'd personally take some Indian stuff too, bhajis, samosas, pakoras...

I've made the ones from PPK (linkage) twice and they are hard to beat. I took some into work once and people couldn't believe they were vegan.
Some have other influences in them, but I'm sure you can find authentic ones online, Manish has certainly posted plenty :)
You're really missing out! Something easy to start with is something like dahl, then you can move on to fancier stuff if you like the taste. Don't forget the coriander!
I'd be more tempted to make a curry with them, but I just prefer curries :) An Indian place near me does a fantastic kidney bean curry!
