Default i've decided to make a free, vegan cookbook

Okay, i've decided to make a free, vegan cookbook, for people to get to know about veganism, for people who's stuck in the same old recipes, for inspiration and for everyone to use as they please.

so i was wondering if any of you have any good recipes you just NEED to share with the world?
it'll be in danish, and very diy-ish. i can't afford to make a "real" book to hand out for free, but it'll include some pictures and stuff, to make it nice.

hope you'll post, link, whatever your favourite recipe, so i can get this project running smooth.

btw. thanks to cherry for letting me use some of the recipes from parsleysoup

Sweet 'n Sour Tofu- serves 2

This recipe was taken from recipezaar and a cookbook I have. When I make it, I add more tofu and veggies and a little less sauce. It is incredible; even my omni friends, family, and some kids I know loved it. It is without a doubt my favorite meal.
    Ingredients:
-1 c bell pepper, red or green
    -1/2 a white onion
-8 oz extra-firm tofu (I used silken, frozen and thawed and got a great texture)
-8 oz canned pinapple, in it's own juice
    - 4 oz sweet and sour sauce (I made my own my mixing 4 oz all-fruit apricot preserves, 1 tsp Bragg's or other soy sauce, 1 tsp white vinegar, and 1/2 tsp mustard powder.)

    1. Cook tofu in a stirfry pan or wok with cooking spray or oil until slightly browned on all sides. Remove from pan and set aside.
    2. Put the chopped onion, peppers, and pinapple with its juice into the pan. Simmer until juice is reduces.
    3. Add tofu back into the pan with some sweet and sour sauce. I like to let it simmer for a couple more minutes until the liquid reduces a little more and the tofu absorbes lots of flavor from the dish.
