    Smile Nutty Apricot Tarts

    Nutty Apricot Tarts

    With it's sweet and perfumey flavor, this cool & delicious desert is perfect on a warm summer's day. Super easy to make!

    Serves: 5
    Prep. Time: 10 - 15 min.
    Cooking Time: 5 min. (microwave) or 10 - 15 min. (stovetop)
    Cooling Time: 20 - 25 min. (served chilled)


    INGREDIENTS:

    Filling:

    - 10 apricots (fresh, cut into small pieces)
    - 4 Tbs. sugar
    - 3 Tbs. agar-agar powder
    (or other vegan equivalent for 3 egg whites)

    - 1 Tbs. ground hazelnuts
    - 1 Tbs. orange flower aroma
    - 1 Tbs fruit juice
    (I recommend white grape, lychee, pear, or peach)

    - 1 tsp. oil (I recommend grape seed or sunflower)
    - 1 tsp. vanilla extract
    - 1 dash coriander (powdered)

    Tart Bottom:
    - 5 Tbs. ground hazelnuts

    Garnish:
    - 15 pecans
    - Small pieces of apricot for decoration
    - Additional sugar, to taste

    You will also need:

    - 5 Tart Cups
    (you can also use those no-pan-required aluminum
    cupcake liners, if you don't have ceramic or glass tart cups)

    - small saucepan or microwave-safe bowl



    DIRECTIONS:


    Cooking Directions for the Stovetop:
    Mix filling ingredients in small saucepan, cook on med-high heat approx. 10-15 min until mixture becomes soft and gooey.

    Cooking Directions for the Microwave:
    Mix filling in a small bowl, heat on high for 5 min.

    Filling the Tart Cups:

    - Place 1 Tbs. of ground hazelnuts into the bottom of each tart cup
    - Scoop 2 Tbs. of filling into each cup
    - Garnish with 3 pecans and a little bit of raw apricot
    - Sprinkle lightly with additional sugar

    - Allow cups to set for about 5 min,
    - Then place in refrigerator for at least 15 - 20 min.
    - Serve chilled.

    I suppose it is a French recipe... sort of...

    This recipe is one of my own creations. I'm an American, but, I do live in France and I was inspired by the fresh (French) apricots from my mother-in-law's garden...

    So, yeah, I guess it's technically "French Nutty Apricot Tarts"

    (and it's also fabulously delish! I recommend making tripple the recipe because it's just so damned good!)
