Does anyone know what I can use as a substitute for evaporated milk in recipes? Since it's thicker than regular milk, I don't think regular soy (or other nondairy milk) will work.

No clue, but maybe you could add some cornstarch to the soy milk? I really don't know if this would work, but maybe? To thicken using cornstarch add 2 parts to 3 parts warm water. I usually do 2T cornstarch to 3T water when making about 1 1/2 cups of gravy.

what about some soy cream? thats fairly thick, thicker than evap but you could water or soy milk it down a bit??
I'm not familiar with soy cream. Who makes it? I can see if I can find it in the US.
