    Default ice cream cake?

    My bf's birthday is next week, and he doesn't like plain cake...but he does like ice cream cake. He's not vegan, but I would like to make something we can both enjoy.

    I've looked around online a bit and come up with a few things, and am wondering if anyone here has any experience or tips.

    I've never made an ice-cream cake. Sounds decadent though! Probably I'd make a couple of vegan sponge cakes. Then I'd get some vegan ice-cream and press it into the cake tin you used to make the cakes. That way you have a layer of ice-cream the same size as your cake, which you can keep frozen till you're ready to sandwich the whole thing together. A layer of fruit spread might make a nice touch. As an alternative you could just have a sponge base, make a carrot cake base instead of plain sponge, or use a digestive biscuit/graham cracker crust. Enjoy

    Normally Baked Alaska has eggs, though, Red. I think an ice-cream cake just has ice-cream and some kind of sponge or crust. You can vary it however you want. You could put fruit on top, for example, mmmmmmmm!

    you can just mould soy ice cream but letting it slightly defrost, then putting it into a cake shaped tin maybe adding some fruit, choc chips, whatever you like, crumbled cookies, and then re-freezing it, we used to do this when we were kids because i was never a fan of cake!

    thanks guys. it should be pretty easy, the actual construction scares me a little just because i've never tried. i guess i'll just go for it and if nothing else we'll have a messy heap of cake and ice cream to eat

    I used to work at a place that made ice cream cakes. I am pretty sure that they froze the pieces of cake first in thin layers. They softened the ice cream before using it. Then the spread the ice cream on, put it into layers, and refroze it. You could add cookie crumbs or something too.

    Mmmm, add a layer of chocolate fudge like how Dairy Queen used to do with their ice cream cakes.

    mmmmmmmmmmmm ice cream cake!!!

    either you'd have to have lots of folk ready to help you eat it before it melts into mush (sounds tasty too though ) or eat it all between you

    mmm..i remember i had ice cream cake for my 5th birthday. it was soo good..i remember feeling soo sick cos of how sweet & sickly it was. but oh so good.

    ooooh, I didn't end up making it I didn't have the time or money. I bought a box of brownie mix and didn't even end up making that! I'd still like to try sometime though, if I do I'll post the results.
