Mmmm, I finally got around to making the corn chowder tonight, as I had sweet corn, jalapenos, and potatoes from the CSA I belong to. It was so great; I can't believe I've waited so long to try it! I added extra cayenne so it was quite spicy, but combined with the sweetness of the corn, it was really excellent. I will definitely be making it again this summer while corn is in season.

I made the mocha chip muffins today, without the coffee. I've made them a few times before and they always work. This time I used a mixture of vinegar & soya milk instead of the soya yoghurt & they rose really nicely and turned out perfectly

I have started using the pizza dough recipe from VVAV as my go-to. Just follow the instructions and Isa won't lead you wrong VVAV was my first vegan cookbook (along with HIAV) and still one of my most used.

Reading this tread has now made me order VwaV. I have Appetite for Reduction which is amazing, but it doesn't have cake/pudding recipes in it.
So VwaV, which has been on my wish list for ages is now on the way.

I made my first tofu scramble using the recipe from VwaV the other day. Loved it!! I added some daiya pepperjack style shreds and it was decadent.
I didn't think it was possible to recreate scrambled eggs, but I stand corrected.
I'm cooking about 5 things from VWAV this week, so far I have made the Banana Split Pudding Brownies & Potato & corn chowder. Both are delicious
I have also made the mash with punk rock chickpea gravy, breakfast chorizo & raspberry blackout cake (using the English amounts not US). All were really good
Sunny Blueberry Corn Muffins - Not very sweet at all.. Kind of dry, actually. They weren't awful or anything, just not my favourite.

I made the Carrot-Ginger-Macadamia Cake yesterday, but I used a basic cream cheese recipe (1 container tofutti cream cheese, 1/2 cup earth balance, whip it together, add 2 c icing sugar, 1 tsp vanilla and 1.5 tsp FRESH lemon juice. YUM) and it was definitely worth making again!!!
I made it for my coworker's last day of work so I really hope she likes it! All my cakes usually look horrendous but taste good. I need to work on my presentation. haha
ETA : I left out the nuts because my boss has a nut allergy. I just used a little bit extra carrot instead.
Has anyone made the Brookly Pad Thai? I making it on Friday and was wondering if its worth the bother?
