    Default How to substitute sweetened condensed milk?

    I want to veganize a fudge recipe, and it calls for 1/2 cup of sweetened condensed milk (ew). Anyone have any advice? I couldn't find anything from doing a search.

    I personally do not believe that recipes which depend on the caramelisation of lactose can have sucrose directly substituted in. I also don't believe people on the internet who claim they've gotten unsweetended soya milk to caramelise

    You can't beat some good old boiling sugar (well, maybe boiling veg oil in terms of danger). I found a fantastic website at the weekend for begginers (and people who've learnt from books) to sweet/candy making here that has videos and lots of info on the science.

    The above recipe is an example of sucrose and soya milk. One of the comments is that it caramelises just like condensed cow milk. Actually it will caramelise just like sucrose in water (soya milk being mainly water). If the purpose of making the recipe is to then heat it for caramelisation after letting it cool down then as far as I know you're wasting your time - you may as well just continue heating it. I stand by my previous comment though that lactose caramelisation isn't the same as sucrose caramelisation, so you'll have fun if you're trying to substitute directly into a recipe that expects lactose.

    what about Silk creamer and add some sugar in it?
    I eat nutritional yeast by the spoonful.
