    Default Creamy Cauliflower Soup

    From Complete Vegetarian Kitchen by Lorna Sass


    Makes 4 to 6 servings

    1 small head (1 1/2 pounds) cauliflower
    2 c. water
    2 c. vegetable stock
    3/4 pound carrots or butternut squash, scrubbed and coarsely chopped (peeling not necessary)
    1 medium potato (about 1/2 pound), peeled and coarsely chopped
    1 tsp. dried tarragon
    1 to 2 T. light miso or sea salt, to taste

    Garnish - 3 radicchio leaves, cut into thin strips, or 4 to 6 T. chopped watercress leaves


    1. Cut the cauliflower into medium-size florets and set aside. In a large stockpot, combine the water, vegetable stock, carrots, potato, and tarragon. Bring to a boil. Add the cauliflower. Return to a boil. Reduce heat and simmer, covered, until the vegetables are very soft, about 20 to 30 minutes.

    2. Puree the soup in a blender or food processor, in 2 batches, adding the miso or the salt. Return to the pot and rewarm. Adjust seasonings and garnish before serving.



    I haven't made this yet, but I remembered that I had this recipe with disguised cauliflower.

    mmm this sounds delicious. this would work well with broccoli aswell i imagine?

    mmm i made this this morning. instead of potatos, i added peas and lima beans (for a bit of starchyness) because i had no potatoes! and added nutritional yeast, nutmeg, and lots of garlic and pepper for extra flavour. after i pureed it i added more peas so that they would be whole. i also needed to add more liquid because it was so thick! so i added a bit of soymilk and extra water. this is delicious and very very filling. my boyfriend loved it. its a great way to get your veggies and fiber and the carrots after blended give it a "cheesy" color. thanx for the recipe artichoke im sure ill make this more then once!

    Little pinch of nutmeg is always nice in cauliflower soups, too!

    Mmmmm...this soup is delicious. I forgot to get tarragon at the store, and so I substituted basil. It tastes wonderful!

    my kind of soup. Thanks for recipe

    However I did a bit different because i didn't have this spice.
    I used ground cumin and provansal herb blend (I'm not sure about the spelling). I cooked the onion and garlic on olive oil till translucent.

    I didn't add no stock, only salt.

    I also blended only 3/4 of the soup with the onion and garlic. Rest poured back to blended soup.

    I'm telling ya. it was delicious.
