I just eat mine straight from the sprouter, VeganGran.
I sometimes get ones in my vegetable box that can be stored for a while in the fridge and they seem fairly dry now you mention it but I'm not sure how they survive without water

Do you know if 'leaf' beet seed sprouts would be edible?

No I don't know I'm afraid but the sprouts of most (entirely*) edible plants seem to be edible, don't they, famous last words?
I think the problem with the beetroot sprouts, apart from the low gemination rate which could just be a problem with that batch, is the tough husks. I found I could wash some of them away, but not all.
* not sure about rhubarb sprouts
I just did a batch of coriander sprouts that worked quite well, a very good alternative for when you can't grow it.
