Default Spaghetti with garlic and chilli

This is a really recipe that I make when I have nothing in my storecupboard It's really simple but really tasty.

"Spaghetti con aglio olio e peperoncino"

    Ingredients:

    Spaghetti
    Good quality olive oil
    A few cloves of garlic
    Some dried chilli peppers

While your spaghetti is cooking, gently fry the garlic in the olive oil (the quantity of oil you use depends how much spaghetti you're making and how much oil you like. Ditto for the garlic, depends how much you like - I generally use 2 cloves for one person and 3 or 4 for two people) until golden brown. Crush the chilli pepper and cook a little longer, make sure it doesn't burn.

Drain your spaghetti and dress with the garlic and chilli oil.

    Buon appetito

Mmmh, one of my favourites! Thanks for posting the recipe!
My flatmate tends to go mad on the garlic though - no prob for him as he's working from home, but not so good for the others...

It's so simple I feel a bit of a cheat calling it a recipe But it comes from that magic that Italians have of taking simple ingredients and turning them into something magical

That should read "Crush the chilli pepper, add to the oil and garlic and cook a little longer."

Hope that was clear You should definitely try this recipe Sam, it's great.

This sounds great. Do you just have it with green salad and bread?

    Default Amaranth

Hehe - the way to a man's heart is always through his stomach By the way, and this is off-topic, I had some amaranth last night, which is supposedly very high in iron. I know you've mentioned low iron levels a few times, so it might be a grain worth checking out.

Where did you find amaranth, Fiamma? I really like it and used to eat it a lot in Germany, but I haven't been able to find it here. In NaturaSì they didn't know what I was talking about (or maybe it was my bad Italian, who knows?)

I found it in NaturaŚ in Via Montefiorino, near the stadium (Andrea Costa). I go there quite often, so let me know if you're having problems finding it and we can sort something out.

Thanks, that's really helpful. I usually go to the one in Via Po, which is just five minutes from my flat, but I'll try the other one.

i'm gonna try and make this, when i'm to lazy to go grocery shopping for fresh veggies (which i usually am like, five days a month..).
    it sounds delicious.

usually, i keep a big jar of pesto (basil, rucola or sundried tomato), and some homemade olive tapanade in my fridge, for those days, when you just want something nice - NOW. and i often make some grilled aubergine, to store in the fridge for sandwitches. believe me - grilled aubergine, some cherry tomatoes and some pesto ot tapanade - it's GOOD.

I definitely want to make this soon. Spicy spaghetti. Yum.

I wonder if you could add marinara sauce to the oil and then add that to the spaghetti. Unless of course that was implied in any way.
