    Default Spinach Pesto Pizza... YUM!

    soooo good! I'm addicted to this and make it about once a week. If you can find frozen vegan pizza base, go for it. I buy the KABUL brand. Otherwise you'll probably have to make your own (there are recipes on this site). The baking temp will probably be different for a homemade crust since it won't be frozen. BOBOLI all have cheese in them. I used some frozen ones made of rice once for you who are allergic to wheat. They were pretty good but smaller so I used two.

    Ok first make the pesto. 1 Cup firmly packed spinach leaves, 1 Cup firmly packed basil, 1/4 cup olive oil, 1/3 cup vegan parmesan, 2-3 cloves of garlic, 1 tsp lemon juice. Mix it all up in a blender or small food procesor.

    (At this time I preheat oven to 450 )

    Take the pizza crust and spread 1/2 of the SMALL cans of tomato paste. Sometimes I use a whole can, esp if I"m short on the pesto sauce. Then spread the pesto. Then add the following

    1.5 cups grated vegan cheese
    1/4 diced red onion
    vegan pepperoni

    This is my basic favorite pizza but you can add any other topping, I've added the following: diced pineapple, diced squash, pine nuts, roasted red peppers, mushrooms.

    Bake 10-12 minutes. If you use the frozen pizza crust I find that 12 minutes is perfect! ENJOY!

    Sounds good. I can't get vegan parmesan here. What can I use instead?

    Nutritional yeast flakes ground with some blanched raw almonds in a food processor works as a great substitute for Parmesan!

    Hey I found a recipe in the Ultimate Uncheese Cookbook:

    1/2 cup blanched almonds
    2 Tbl nutritional yeast
    1-2 tsp light miso
    heaping 1/4tsp salt

    mix almonds in a food processor into fine powder then add remaining ingredients and process until well mixed. Should keep a month or longer in the fridge.. Good luck!

    Or you can leave the parmasan out. Sometimes I add the pine nuts to the pesto instead of putting them on top.

    BTW, the brand name of the frozen pizza crust is KABULI, not KABUL. thanks!
