    Cool Choco Wowie Cake

    Choco Wowie Cake

    2 cups sugar
    3 cups white flour
    1/2 cup unsweetened cocoa powder
    1 tsp salt
    2 tsp baking soda

    2 tsp apple cider vinegar
2/3 cup oil – something neutral like safflower or canola
    2 tsp vanilla
    2 cups cold water

Mix dry ingredients together in large bowl. Add wet ingredients to bowl & stir well. Pour into an ungreased 9x12 pan & bake at 350 degrees for 35-40 minutes.

    Peanut Butter Frosting

4 tblsp margarine – room temp
    3-4 tblsp creamy peanut butter
    3 tsp cocoa powder
    5-6 tsp milk
    1 1/2 tsp vanilla extract
    2 cups confectioners sugar

Combine the margarine, peanut butter, vanilla & 1 tblsp milk & whisk until smooth. Add the cocoa & mix well. Add sugar about ½ cup at a time, alternating between sugar and 1 tblsp milk. Keep adding the sugar/milk till all the sugar is gone. Frosting should be smooth & creamy.

This cake recipe-using vinegar and oil-is the best chocolate cake recipe I've ever used. It's quite rightly used and adapted by loads of vegan recipes because it's so so good! I made myself this:

for my birthday this year and it actually became more moist and chocolatey the day after!
    Hooray for chocolate cake!

I'd love to try this recipe. But just to clarify, is the flour supposed to be plain or self-raising??

In my experience plain wholemeal will be fine. I use it all my baking.

    Question:
Can these be made into cupcakes instead of a regular cake?
    Peace, love, and happiness.

Yup, just make them in little cupcake tray instead of a big cake tin and ice them how you wish. I like coffee icing

Me too! I get migraines from eating chocolate so we use carob instead.

I'm a little new to posting on this board, but I'm definately going to try out some of these recipes. I've never thought of doing peanut butter icing for a chocolate cake does it really go?

I've also just printed out 4 carrot cake recipes and one date and walnut cake recipe from the carrot cake thread. I home-educate my children so it will be fun for them to try some of these out!
