Have you read Becoming Vegan by Brenda Davis and Vesanto Melina? Its kind of like a vegan bible for lots of us.

You can try out different people's recommendations, and eventually you will get a feel for what your body needs. For me, the basics are whole grains, pulses and vegetables, a bit of fruit, a few nuts occasionally, and I eat some seaweed most days. This is something I've settled into after being vegan for quite a few years. It's important to have a reasonably relaxed attitude - that doesn't mean just eating any old crap unthinkingly, but recognising that it takes a bit of time to change habits. For some people it takes years to find what is right for them, and for others it seems to happen fairly quickly. The things is, different 'authorities'' recommendations often contradict each other (e.g. raw food vs macrobiotics). Your own body is the only authority you have in the end, but diet guidelines can give you something to try out. It will certainly be interesting!
