Gorgeous cupcakes! Do you use an icing bag to get the icing looking so nice on top? I'm thinking of buying one. They look so much nicer than my efforts of icing with a knife!

Hi Wonderwoman For the cupcakes on the previous page, yes I did use a piping bag. I bought a synthetic cloth one @ a homewares shop, it came in a package with a few tips. Other times I use a spatula to smear the icing on, like these, vanilla and choc, g-free cupcakes with caramel penuche icing (icing from V'con).
They're for a birthday in 2 weeks, I wanted to test the icing out, I might try making it with maple syrup this weekend instead of molasses.
Treehugga, you will love the book. The cupcakes are so easy to make, you get used to the ingredients and they cook v. quickly. You will have a lot of fun
And Mariana, I LOVE cupcakes too. They they are one of the main reasons I can't be 100% raw :P (though I have found a recipe for 'raw cupcakes' that sounds interesting!)
I am going to start using this book, but just looked at the recipe and realised i dont know the conversion for the cup measurments anyone know the 0z/g amounts for 1 cup 1 1/2 cups etc?
Dont want to get amounts wrong!
Alison its easier to just buy a set of cup measurers. They sell them at most supermarkets and Wilkos.

Alison, try this conversion table. But as Maisie said measuring cups are readily available at most supermarkets...I got a set from Morrisons for 99p!!

Only remember that most UK cups are 250ml, whereas US tend to be 240ml

Re measurement in cups. I'm a shocker. I just use a coffee mug and almost fill it as my measurements and nothing has ever not turned out really well. Even the most stringent measurements will sometimes end up requiring extra liquid etc due to the types of flour used etc as each batch is d/t - just ask any baker.
My CTOTW book has still not arrived. I've been waiting 3 weeks. Ahhhhh!

Having thought about it I don't think it would matter what size cup is used as the ratio would be the same so long as consistency is applied throughout. I think its better to have the measuring cups though so as to maintain accuracy with the fractions of cups (half/quarter/third etc).

Okay...I saw this book for the first time in real life. And damn it's tiny! It was expecting a big book not some little pocket sized thing....

It wasn't. It had a lot of pictures and yummy recipes but it wasn't normal cook book sized.

it was diddy, but for a cookbook just with cupcakes in, it was pretty decent. It has loads of variations in it. And it doesn't cost an awful lot.
Had the peanut butter ones made into a big cake.

I made vegan rose-water ladies cupcakes. Not from VCTOTW cause I'm still waiting on the bloody book arriving, but off an aussie site. They sounded delicious, but I have to say they were terrible in both flavour and consistency. My son thought they tasted like soggy musk sticks. I had to throw them out. They did look pretty though!
A mixture of brown rice, quinoa, arrowroot and corn flour.
Treehugga, I hope your book arrives soon, Amazon can be good sometimes and other times they arrive slowly. And believe me you won't be worrying about what size it is when you get it. It's a cute lil book and there are LOTS of recipes and plenty of tips and photos. I actually like the size, I can lay it out on the bench and it doesn't take up too much room when baking.
I used rose water 'queens' brand. The ridgey didge stuff - not fake. I felt like I was eating perfume, but it was exactly the type and amount as stated by the recipe. I will never make them again. I had some Haigs violet chocolate once and it was like eating perfume too. Although I love lavender chocolate and can eat it by the bucketful. Well you live and learn!
I ordered the book through Booktopia. I usually use Fishpond who have been quick in the past. It is dragging on and I'll have to follow up with them if I don't here back soon. After I had ordered the book they emailed me info saying they didn't stock books but chased them up after ordering overseas which could cause delays. This made me a bit cranky cause they only tell you this after you have placed and paid for the order.
Oh no, that's a bit stupid of them. I've heard of other online stores doing that too. I hope you get it soon
I finally uploaded my pictures from my camera...this is a Banana Split cupcake from VCTOTW (banana-based cupcake with swirls of chocolate chips and pineapple swirls, topped with chocolate icing, sprinkles, walnuts, and a cherry)....delicious! I made these for my friend's birthday and everyone loved them.
Sorry it's so huge! It won't seem to let me resize it.

I made the pineapple right-side up cupcakes this weekend. They were sooooo good! Also, they are really, really easy to make. I also like that this is a totally soy-free recipe, so you can feed to friends who are avoiding soy. I highly recommend these.

I made gingerbread shaped like tenpins and g-free choc and vanil cupcakes for a friend's 25th bowling party
The gingerbread got a bit jumbled during the car trip so the red icing got on some of the white and one cupcake is missing because as I set it all up a friend came and stole one

I finally got my book. It's fantastic. I made the basic chocolate cupcakes today and they are the best I've ever made (& I make lots of cakes). I'm really impressed. I managed to get green tea powder from the wholefoods store today, so will probably make green tea cup cakes next - didn't realise I needed almond essence though! It's wonderful to be able to produce a light, tasty cupcake.
Glad to hear you finally got the book! The first cupcake I made from VCTOTW was the Cookies 'n' Creme variation (on the basic chocolate)...so good! My friends all told me it was the best cupcake they ever tasted. And to think I'd been weirded out by the idea of curdling soymilk! Let me know how the green tea cupcakes turn out--I really want to try those but I don't think I can justify buying matcha green tea powder unless the cupcakes are really good.
I got my book this week too! I made the gingerbread ones with lemon 'cream cheese' icing. So so good. I can't get the icing to pipe on properly though. I think I made it a little running because while it came out of the icing bag ok, it lost it's shape after a bit. Tasted amazing though. Next...peanut butter ones. I just need to locate ground flaxseed in Brisbane.

i finally found macha powder in a japanese shop in london, but i was dissuaded by the astronomical £8 price tag!
I'm making the green tea cupcakes now so I'll soon know if they are yummy.

Just made the peanut butter ones last night. Very good!!! I think my crappy rental oven doesn't hold it's temperature well though, because they are a bit gooey on the inside and crispy on the outside. Off to buy an oven thermometer!

The green tea ones my son and i really liked but my mother and my younger son didn't like them at all. I think it was more to do with the green colour really. The taste some what almondy. I love the light fluffy moist texture. I have never quite achieved this with cup cakes b/r. I'm tossing up whether to make the coconut or agave ones next. I have to hurry as after next week i will be on a healthy eating plan and will only be allowed limited slimming cupcakes

Try the agave ones, they sound good because they are sugarless, I need to try them. I felt a bit ill after making these the other night, sooo much sugar.

Agave ones are now next on the agenda. I made some healthy low fat banana bread today using agave. That stuff is fabulous.
Haha, I'm taunting myself too. I really need to stop baking. My bf wants to go gluten free and I'm over buying v.exxy loaves of bread from Macro so I am going to try bake g-free bread this weekend and create a g-free bbq sauce for him as well. I might have a break from baking sweet things and go w/ bread instead!
