This book rocks (we got it for xmas this year). Here's a couple of my recent late-night cupcake baking forays:

Maple cupcakes with vegan buttercream icing and candied walnuts (soooo good!):

Coconut cupcakes with lime vegan buttercream icing and toasted coconut (when chilled, quite similar to key lime pie)

My icing technique needs some improvement, but since I've never baked cupcakes before, I'm pretty happy!

OMG, I just want to lick the screen! I love icing, I like the icing more than the cake itself. That icing looks so creamy and delicious.
    Peace, love, and happiness.

Has anyone ever made the Dulce Sin Leche one? I am bringing them to a gathering on Saturday with my (nonvegan) friends, and am trying to decide which ones to make. (Also, I don't want to repeat any I have made as I am trying to make all of them)

I recently made the vanilla cupcakes with the fresh fruit/icing combo in the low-fat vanilla section. I used strawberry preserves and fresh sliced strawberries on top. They were divine! I enjoy mixing and matching the cupcakes and icing from different recipes.

I think I'm going to make the lemon macademia ones soon.

I agree. I made the Earl Grey variation of the Chai Latte cups, and matched it with the lemon buttercream. It was perfect!

I just got this book yesterday and made the chocolate and vanilla marble cupcakes. They were nice but I messed up the frosting as I didn't realise the ingredients list was on a separate page so didn't buy the shortening I needed. I've just skimmed through the thread and see that we can use Trex or White Flora. Where in the supermarket can I find these, also are there any more options for shortening?

I've read through the chapter on tool needed and ordered an oven thermometer. My oven is 40 years old so maybe thats the reason my previous baking attempts have been pretty crap I'm wondering about these shiny aluminium muffin pans they say we need. I can't find any for a reasonable price. Are they really better than the non-stick coated kind? I can't see how it would make a difference really when we're lining them with paper cases anyway

Maisie, you really don't need the shortening, you can use all margarine instead (in case you do want to try it the shortenings are in the margarine section at supermarkets). As for baking tins, I've got two kinds of muffin pans, non-stick and those flexi-silicon ones, both of which work fine with the muffin cases, so yeah the aluminium ones aren't really necessary.

Thats what I did but the frosting was really runny and I ended up putting in all the icing sugar to try and thicken it up. Maybe I measured something wrong somewhere.

I'm glad I don't need the aluminium trays but I think I will go buy a tray with more holes. The 12 hole tray I have wasn't enough for all the mixture. I'm looking foreward to making another batch of cupcakes later, I haven't decided which ones yet though

ETA I have one more question: Are cornstarch and cornflour the same thing?

Mmm kitteh, those cupcakes look fab. I made the oreo ones for a bake sale (not gluten free, just the basic chocolate cupcake) and they sold so fast!
Yesterday I made the Earl of Grey cupcakes with orange buttercream and they were very tasty. They are a variation of the Chai Latte cupcakes that I think I like better, but still, they were good and quickly eaten!

It's nice and we have heaps of it in Australia.

I made the coconut cupcakes on the weekend, I basically added the coconutty ingredients to the vanilla gluten free cupcakes and then I made the lime icing and added some coconut and a piece of lime, yum! Will post a pic when I upload 'em.

    Edit
Oki, I also made some cupcakes last night too, here are some pics:

These are the gluten-free Coconut cupcakes w/ Lime icing

And last night I made gluten-free Gingerbread cupcakes w/ Lemony icing

My parents send me Macadamia Oil.....by the 2 litre bottle! I sometimes use it when roasting potatoes, but mostly I use it in baking where oil is in a recipe. It gives a nice, nutty flavour.

You can buy macadamia oil here, but it's about $20 for 250ml.....which is about 4 times the price of what I can get it for at home.

Help! I'm making a stack of cupcakes to sell at the Wee Green Market tomorrow. (I pop an AR leaflet in with each batch we sell.)
I want to make the cashew butter ones, but the frosting/icing needs dried soya milk, which I don't have and have no chance of getting in time. What can I use instead? Someone please let me know soon!

I'd probably just make an ordinary batch of the fluffy buttercream and add the flavourings/spices from the one that requires dried soya milk into that one - either that or just make a vanilla buttercream - it tends to go well with pretty much anything!

Probably wasted on omnis, of course, but we want them to realise just how great vegan baking is... (And read the AR leaflets!)

    I wondered about ground cashews?

I think the cashews wouldnt do the dame job, Penny. I think that the Soya would soak up some moisture, and bulk out, which the cashews wouldn't.

I just had a quick look at the recipe and it looks as thought the soya milk powder is used mostly to thicken it. You could reduce the liquidy-ness of it by using soft brown sugar instead of maple syrup. Alternatively, you could try something like cornflour (but I'd experiment with a small batch first to see how it tastes).

I don't know Penny, if the dried soya milk is in there to give the frosting a fudgy/caramelly type feel (going on photos I've seen of them) then the cashews may not work so well (I'm sorry I can't check in my copy - I had to pack all my cookbooks away due to having major building work done on my house, otherwise I'd be more help!)

Thanks, Sluggie! I think I'll experiment when it's just for the family and do the creamy buttercream with added cashewy stuff in the meantime. It sounds like cornflour might do the trick, though.

Off to ice me some cupcakes! (It's all these cups I've been using. I'm coming all over American-ish...)

Yum, those look delicious, and beautifully decorated, too. I've been making tons of cupcakes since I bought this book! They're all so yummy. Yesterday I made banana split cupcakes for my friend's birthday and they were amazing...and everyone loved them: one of my friends was like "I LOVE vegan cupcakes!!" I'll post pictures if I ever have time to upload them, but my icing's not as pretty as yours, Kitteh!

OK. All you people have convinced me to buy yet another vegan cookbook, because of your drooling, yummy looking photo's and comments. I have now ordered my new 'cupcakes take over the world' and eagerly wait it's arrival and pestering everyone with how good/bad the cakes turnout. If I ever work out how to do it, I might even post pics of them!!
