This is my absolute favourite recipe book. I made a couple of batches of plain vanilla for an open day at work last week and all the omni's raved about them and said they want the recipe.
I am the worlds worst baker but everything i've made has come out perfectly. My favourite is the gingerbread ones with lemon icing.
I have used this cookbook so much I had to go out and buy a 2nd copy. The 1st one is so dirty with ingredient splatters that sometimes it's hard to see the printing
I made the carrot cake cupcakes this weekend, and they were delish. I am slowly making my way through the book. My favorites are the tiramisu and the earl grey cupcakes (a chai latte varation) with orange cream frosting.

The carrot cupcakes are one of my faves, FdC! I love the carrotty texture
On Saturday I baked three batches of cupcakes, only I just realised I didn't take a photo of the batch of vanilla and vanilla icing ones that I made to take to the Vegan Expo, oops.
Anyhoo, first up I made the Mojito Cupcakes from VeganYumYum. I used the gf recipe from VCTOTW but with her substitutons of lime juice, spearmint infused milk and rum, I forgot to add the lime zest so I added it to the icing along with more lime juice and rum. They were delicious and I think I love them as much as carrot cake ones!
Then I made a batch of half gf choc, half gf vanilla and topped them with Oreo icing. I made Nintendo Mushrooms from marzipan and popped them on top with Oreo halves.

I adored my copy, but it was recently destroyed in a flood at my parents house , I'm ordering a new one but in the mean time would someone mind pm-ing me a recipe or two? I wanna bake for my boys this week. The cappucino or banana spilt or your personal fave would be great!

I do not have the book, but found a recipe from the author on the internet for chocolate cupcakes with buttercream frosting. I made them yesterday and they are amazing. I am in love with any kind of cake, big or small, so I am in heaven now that I know I can still have it, and it tastes "normal".

^ Hahaha. I will say the same thing as an excuse. Those cupcakes are so amazing, I only wish they were healthier. Oh well, 2 out of 3 (vegan, and sweets) isn't bad!!
Super-nice cupcake pictures everyone! The ones below are chocolate, one with cherries and vanilla cream cheese icing, and the other with lemon zest cream cheese icing! The chocolate ones always seem to turn out well, but the vanilla ones haven't been so good for me. Next I'm thinking of chocolate tiramisu cupcakes!
My hubby bought me a copy of this a month back. I've made the orange pudding cakes twice, they are so yummy.
I find cupcakes freeze okay so that's what I've done. They aren't as nice defrosted, but close enough and a little extra icing/frosting hides a multitude of sins.
Quitting something because it's hard is wrong, and quitting something because it's wrong is hard. One takes cowardice, the other bravery.

I also like to make the basic chocolate cupcakes which are foolproof, perfect every time!
I made the pumpkin ones too - epic cupcake fail! I burnt the cakes then the icing went wrong. I abandoned them in disgust, but my partner's still happily eating them. He thinks I'm crazy.
I've gotten so used to superior cake since I started using VCCTOTW that I can't eat anything sub-standard anymore!

I made the pumpkin chocolate chip ones for Halloween b/c they were orange and black . I changed the icing a bit to make it more of a frosting. I used all the same ingredients just added more sugar and soymilk. For me, the cupcake is all about the frosting. Both my husband and I love them.

Just made the Chai Latte Cupcakes, wow. The smell as they were cooking was so good that i hung the washing out in my flat on the clothes airer as they were in the oven so it all smells stunning to!!

I have to say, that when I made some of the basic chocolate cupcakes and the golden vanilla cupcakes recently, I wasn't so impressed, the icing was good and we really enjoyed that but I was left really unsure about the cake bit of the recipe.
Everyone seems to be raving about them, perhaps I cooked them wrong, I thought they lacked flavour and were almost 'eggy' in the middle.
Anyway, the pictures all look great!
I made a half ass attempt version of the basic chocolate cupcakes and thought they were yummy! I just threw all the ingredients together, mixed them up and poured the lumpy mix into the pan... they were flat, but the taste couldn't be much different?

I made some basic chocolate cupcakes at the weekend with a vanilla/chocolate frosting mix - it wasn't quite the vision in marbled frosting I dreamed of, but they still looked quite impressive and tasted amazing!

I have a bit of a strange question - does anyone have any advice for NOT getting icing/powdered sugar all over a 20cm radius of the mixer when making frosting?
No matter how I try I always get a cloud of sugar coming out of the mixer when I make the basic buttercream frosting, and have no big ideas on how to stop it

Made this weekend: vanilla cupcakes with vanilla frosting & jelly tots, choc cupcakes with choc frosting, and peanut butter cupcakes with choc frosting & walnuts...
I actually altered the vanilla recipe slightly, removing the cornflour & adding a wee bit more oil. This seemed to make a bit moister and more like the choc cupcakes turn out.
