I am making the pumpkin chocolate chip cupcakes with cinnamon icing tonight for my coworkers and my family Thanksgiving gathering. I love pumpkin! I love chocolate! I love cinnamon! How can these not be great! I'll report back to the list soon.

I am definitely ordering this book!YUM! My sister wants me to make her stacks of vegan muffins for her 16th birthday (instead of a cake), preferably with pink icing. Is there anything suitable in this book?

So I made the pumpkin chocolate chip cupcakes with cinnamon frosting and they are the bomb! Just dense, moist deliciousness. They are not very sweet as far as cupcakes go, but the complex interaction of the pumpkin, chocolate, and cinnamon is heavenly. Sorry I don't have pictures.

The count stand so far at:
4 cupcake types made...4 types given an A+

Or alternatively you could ask one of the very nice people who has the book already to PM you the recipe instead!

I am going to make some for Christmas, I want them to look like mini puddings, but they don't have to taste like puddings... will have a flick through the book and decide on which ones to make. Will probably go with the base of g-free vanilla or choc then ice them with some and pop some mint leaves on and the tiny baubles from raspberries.

    they look amazing kitteh!!

just so everyone who hasn't got around to baking anything out of the book yet, i've made them into muffin type buns before..and a cake when i'd run out of bun liners..i've had a 3 year old practically make a batch entirely on his own ( a bit messy but..)..and each and every time they emerge from the oven beautifully.

no reasoning not to get baking!

Allisa - your vanilla buttercream icing (the last photo you posted) looks amazing :O how did you get the colour of the icing to sort of change like that?? wow
After making the buttercream I seperated it into two bowls, used blue food colouring in one bowl and red in the other. Then I just spooned a bit of the blue frosting into my piping bag and a bit of the pink frosting on top of that. keep doing that until all the frosting is in the bag, and then pipe away! It sounds complicated, but it's really easy.

Does anyone know what the ingredients are for the apple cider cupcakes? I need to stop at the store on the way home and I forgot the book!
There is a store near my work that will have the agar agar flakes, which I remember I need, but if there are any other ingredients that are difficult to find, I will not be able to make them tonight as I work almost an hour away.

So, I decided to make the Chai Latte cupcakes and the Basic Vanilla one with chocolate vegan cream cheese frosting to take to work today.
And they are a hit! I love it when my co-workers rave about my vegan treats (especially the ones that eat them without realizing they are vegan).
Most of my co-workers are very open and interested in everything I cook, and my lifestyle in general, so I am lucky anyway.

I have got to get this book!
I'm going to buy a copy for my best friend too - she is Jewish and and veggie, so although she does eat dairy, she bakes stuff for her husband that is dairy-free that he can then eat at the same meal as meat. All very complicated...but she LOVES baking and there is no way she won't love baking these!!

Vegan Cupcakes Take Over The World is taking over my mind - have ordered the book and am waiting impatiently for it to arrive so I can begin baking. I have looked at so many photos on Flickr that I am beginning to dream of cupcakes (or fairy cakes as we called them when I was little) with lots of lovely icing! Mmmmmmm

My book has arrived and I made the cashew butter cardamom cupcakes - a lot of problems with it as I seem to not be able to follow instructions, but I managed it! And they taste delicious - especially the frosting - mmmm. Very filling, too! I need to get myself better organised the next time I bake but I am looking forward to trying another recipe. I have ten more to eat... wonder how long it will take?!

I just got the book and I've made the chai latte cupcakes, the green tea cupcakes and the mint chocolate ones. They're all sooo good.
Just out of curiousity, what do you all use as icing sugar?

I made de-glutenized Earl Grey tea cupcakes (variation on the Chai Latte) with lemon buttercream yesterday. They were awesomely good and really easy to make. Alas, they were all eaten before I had a chance to take a picture.

Does anyone know if mint essence and mint oil can be used interchangeably? I want to make the chocolate mint cuppers, but all I could get was mint oil. Is this more concentrated than mint essence?

I suppose so. I would have to be careful not to do my usual thing of getting impatient waiting for a drop of essential oil to come out, shaking the bottle vigorously and accidentally shooting out about five drops at once . I imagine that wouldn't be very tasty.

I really must use this book had it about 6 months and still not used it

Which recipe do you use the most - as in im sure there were 2 main recipes 1 with oil 1 with marg ,never found cakes with oil nice?

Doubt mine will ever look as nice as in the book - the extras like the buttercream piped on looks time consuming but will get round to trying one day!

don't forget that if it all gets too much to faff about doing individual buns, you can just bung the mixture into a cake tin and make it into a cake..the recipes are so easy though...
