A weird thing is that I'm mainly posting hearty recipes on this forum, though 80% of what I eat is either Mediterranean or Asian... I needed something comforting tonight and thought of the few things my mother actually was able to cook

And somehow then I was craving Goulash, and my experiment turned out even better than the real thing Yeah I know it's not healthy and TVP blah blah...enjoy!

So that's the recipe (serves 4, or two me's ):

2 red bell peppers
1 onion
100g TVP (cubes)
0.75l vegetable broth
1 tomato
paprika
salt + pepper

- Soak the TVP in hot vegetable broth for about 10 minutes.

- Finely chop the onions and fry in some veggie oil until transluscient, then add chopped peppers.

- Add the TVP (without broth) and paprika (as much as you like...I used maybe 1tbsp) and sauté until all liquid is gone.

-add vegetable broth (can also be the TVP broth) and bring to a boil, then simmer for another 10 minutes, add the diced tomato after 5 minutes and spice up to your liking.

I love the goulash with fussili noodles, but some people like it with potatoes, dumplings...
