    Default Copycat Recipes for Amy's frozen meals

    Has anyone here come up with copycat recipes for Amy's frozen meals such as her Golden Vegetables Enchiladas or Indian Mattar Tofu? I love these foods but would like to learn to prepare them or something close. Perhaps this would be a good thread if moved to the right spot. Eve

    i love the Amy's enchilada sauce, i wish they would sell it in seperate jars like they now do for the pasta sauce.

    i am not aware of any copyate recipes, but there is one here for making tofu Panir Style (which i assume is what the Indian Mattar Tofu is going for, that dish traditionally has panir (cheese) instead of tofu.) http://veganfeastkitchen.blogspot.co...sh-cheese.html the rest of the recipe is for Saag Panir, which was one of my favorite indian meals. i haven't had Amy's version, but I am sure you could look for a Mattar panir recipe and use the vegan panir and substituite soycremer in place of cream in the recipe.

    Mattar Paneer Recipe


    Ingredients
    1 block of paneer, cut into cubes and deep fried (use vegan panir recipe from the other link and pan fry OR just use tofu)
    1 cup of frozen thawed green peas or 1 cup of de-hydrated
    green peas, soaked in water overnight and then boiled
    1 small onion chopped finely
    2 tsp ginger-garlic paste
    1 1/2 tsp red chilli powder
    1/2 tsp turmeric powder
    2 tsp dhania (coriander)powder
    1/2 tsp cumin powder
    1 cinammon stick
    1-2 cloves
    1 cardammom
    1 tablespoon cashewnuts, powdered
    2 tomatoes, pureed
    1/2 tablespoon whipped cream or malai (use Silk soycreamer)
    2 tsp finely chopped coriander leaves
    1 tablespoon ghee (use earth balance margarine)
    Salt to taste

    Method
    Heat the ghee and add the cinammon, cardamom and cloves.
    After 10-20 secs, add the onions and ginger/garlic paste.
    When the onions turn light brown, add all the powdered
    spices and cashewnut powder.
    Fry for about 1/2 a minute.
    Add the tomato puree and salt to taste.
    Fry on high heat till the mixture thickens.
    Now add the peas and enough water and bring to a boil.
    Add the malai and paneer cubes.
    Mix well.
    Stir in the chopped coriander leaves.
    Serve hot with paratha or nan.

    I'm going to give the panir a go sometimes soon. i picked up the agar yesterday!
