    Dina Aronson is happy to report that you can bake with flaxseeds and "not affect the beneficial oils in flaxseeds". AWESOME! I always wondered about this. The protection of the proteins and such I am sure.
    Anyway, there is a recipe for egg-free French toast , pumpkin bread and pecan waffles.
    Haven't tried them.

    I've been successfully baking with flaxseed for years. I use it as an egg replacer and it works well as an oil replacer. I also use bananas or pumpkin puree as an oil replacer when baking sweets.

    Here's my fav chocolate cake recipe (big hit with my family) using flax as an egg replacer and a banana as an oil replacer:

    1-1/2 cups organic whole wheat flour
    1/4 cup maple syrup or raw sugar
    1 t baking soda
    1/2 cup cocoa
    1/4 cup organic milled flax seed mixed with 1/4 cup water
    1 organic banana
    1 t vanilla (If I use maple syrup, I don't use the vanilla)
    1/2 cup hot water
    1/2 cup soymilk
    1/2 cup raw almonds

    Put dry ingredients in a food processor and mix, add wet ingredients and mix. Add almonds and gently mix in. Pour into a greased pan (I use 1/4 t olive oil and smear it onto the pan). Cook @ 350 appx 25-35 minutes. This recipe is the best chocolate cake recipe I've ever tried and I've tried at least 10 recipes.

    That sounds freaking awesome. Have you used this recipe as a base for other recipes?

    Yes! Sometimes I leave out the cocoa and cut the water in half and make spice cakes (1 t cloves, 1 t nutmeg, 1 t cinnamon, and I sub about 1/3 cup of pureed pumpkin in place of the banana...it's awesome. Or I make berry cakes, leaving out the cocoa and cutting the water in half and just adding a cup or two of my fav organic berries. You probably know that bananas freeze well, I buy about $10 worth of organic bananas and freeze them for baking, I just pull them out about 30 minutes before I cook the cake and they work fine.
