    Default my tempeh tastes off

    I'm making tempeh and white bean sausage patties from VWAV and when I tasted the mixture to see if more seasonings were in order, I noticed that the tempeh tasted off. I know it's the tempeh because I've had this happen with other packages of tempeh. It tastes kind of bitter or something.

    What causes this? If the flavor is tolerable, is it safe to eat? Is there some way to prevent this from happening to future packages?

    I have no idea but I have noticed this too. Tempeh is fermented so it must be something with that?

    Well, after the sausage patties were all cooked it tasted fine and I ate a bunch of them. And I didn't get sick, so I guess it's OK to eat it.

    tempeh just tastes weird sometimes, it depends on the brand name!

    I tried my first bit of tempeh a few months ago and bought more recently. The other day I cooked it and it tasted nothing like the first time, definately bitter and it didn't seem to cook right. I wonder what's wrong with our tempeh? Hmm.

    I think tempeh is just unpredictable. I have some in the fridge. I'm going to marinate it in some soy sauce, ginger, and garlic and add it to my stir fry. I like tempeh more than tofu!

    I like them both, but agree that tempeh is totally different from tofu.

    Where do you even find tempeh? I went looking for it at the store last night and couldn't find it with the tofu or in the health food section. Is it refridgerated? In a box? I wasn't even sure the type of packaging I was supposed to keeping my eye out for.
    (I would have asked staff for help, but I went around 10 at night so there were only a few people working and they were quite busy re-stocking the shelves.)

    I found mine in the refrigerated case with the [non-frozen] veggie burgers, fake meats, tofu, soy cheeses, organic dairy cheeses, near the soy milk. Mine are labelled "tempeh burgers" but it's just plain ol' tempeh...but in a "burger shape".

    I bought some herb tempeh today, in frozen form. I'm probably going to thaw it later in the week and make it into something. I'll let you know how it goes.

    The natural foods store in New Haven carries several different "flavors" of tempeh - e.g. flax tempeh, multigrain tempeh, etc. They probably have herb tempeh. I haven't been brave enough to try any of them.

    I was thinking of making this one into some kind of pasta dish, with maybe a light tomato sauce. Not sure yet. I'll let you know what it's like though!

    I had my tempeh today (with the soy sauce, garlic, and ginger in my stir fry). It was okay. I only ever had it fried up and eaten as a burger...and it tastes better that way. I had to put ketchup in my stir fry for me to enjoy it.
