    Question stearyl-2-lactylate

    stearyl-2-lactylate

    anyone know anything about this? i can't seem to find much info and its in a few commercially made pita/bread products i've seen. can't remember off hand if it's the calcium stearyl-2-lactylate or the sodium...

    i see lact- anything and automatically decline it..

    Looks like it is one that can be animal or vegetable derived.

    I'd probably assume animal unless you know for sure.
