    Default Moroccan Food?

    Hello people

    I am cooking a meal for my Mum this Sunday and when I asked her what nationality she wanted she said moroccan. I am thinking of doing some kind of tagine with cous cous. Anyone have any good recipes - help?!

    Dear Fiamma

    Wow I have only done two posts today and you have helped with both - I am going to try the lentil tagine on the link you gave me - maybe with some apricots for added flavour.

    I make tajine about once a week. Next to a varying selection of vegetables, I add the following spices:

    -garlic (freshly ground or powder)
    -cinnamon
    -cumin
    -ginger (freshly ground or powder)
    -bay leaves
    -cubed pickled lemon skins (easy to make yourself)
    -a tiny bit of orange blossom water
    -cayenne pepper (depending on how hot you want it)
    -safran (nice but expensive so I rarely add it)

    This will give you a rich and zesty aromatic tajine.
