So easy to make, and yet it tastes way better than most yucky vegan cheese.
Here's what you do:
Take a package of firm tofu, make sure you drain all of the liquid out of it and plop the tofu into a big bowl. Crumble the tofu with your hands and squish it inbetween your fingers for a bit. Add a couple table spoons of olive oil and continue mixing it all together. Throw in some nutritional yeast, but dont over do it. Mince some garlic and chop up some basil and throw that in there as well. Mix it all together until its evenly distributed and has the consistency of ricotta. Viola!
Vegan Ricotta cheese. Put it on your pizza now, and never buy that vegan gourmet again.
