    Default Carrot soup



    as yuo all know, I only measure approximatly!
    good suop to make if yuo have some carrots yuo do not know what to do with. I dont pre heat my oven, so I am not sure exactly how long the carrots take to soften, I guess it depends on the carrots and yuor oven aswell!


    7 or so large carrots, or 14 smaller ones.
    Oil of choice (I use olive, but I do not think it matters)
    vegetable stock or broth approx half pint
    red or white onion
    pinch of curry powder ( I always use mild)
    200 ml soy milk, preferably unsweetened
    chickpeas (optional)


    slice carrots lengthways, and place in a roasting tin or on a baking tray, drizzle with oil. Take them out of the oven when they are soft enough to get a knife thru, and starting to char.

    Sweat the onion in some oil or margarine until transparent. place vegetable stock in a pan and add the oniom and softened carrots.blend until carrots are pureed.
    add soya milk and as many chickpeas as yuo like in yuor soup. add the pinch of curry powder, and if add more stock until soup has desired consistency.
