i made this today..its very delicious.
ingredients..
onion
chickpeas
leftover potatoes
cucumbers
soft tofu (egg substiture)
eggplant
frozen beans/peas/carrots
seasoning salt (to taste)
1 tiny dab of balsamic vinegar (to taste)
I serve this as a main breakfast coarse..with a side of cucumbers dipped in a light coat of balsamic vinegar.
