    Default Wedding Menu Help!

    Hi all,

    This is my first post - first of many hopefully! I need some suggestions for my wedding dinner - starter, main course and dessert. The hotel came up with melon, stir fry and then fruit salad - not acceptable on my wedding day!!! I'm into gourmet stuff for special occasions.. I am meeting the hotel on Friday and want to give them recipes. Any suggestions? One thing I had in a restaurant that I loved was pistachio and parsnip cakes with a red pepper coulis - anyone have a recipe for something similar. Thanks

    Thanks for the replies! I looked at those links but they are really about buffets. I will be the one and only vegan so it's just a meal for me I need and it's a sit down meal we are having! Any more ideas?

    Oh - gosh. I didn't realise it was just one meal. They should really be able to push the boat out if it's just for you. I can't believe they offered you melon , stir fry and more fruit. (Actually yes, I can ) That's about as unadventurous as it's possible to be!

    It has to be food you really love. I was going to suggest that you give them a list of the ingredients you really like and let them create something fab, but on second thoughts it seems they have no imagination what-so-ever!

    Thanks to all! I checked out those links and did a few searches - not what I'm looking for really.. I am thinking about something like -nice imaginative salad for starter, some kind of bean and vegetable cakes with nice sauce or Moroccan Spiced Vegetables & Pilaff Rice Wrapped in Filo Pastry (had this in a restaurant once mmm) for main course and chocolate cake with vanilla ice cream for dessert!
    I have little faith in this chef however since receiving his suggestions!! Will he sneak in butter or milk or chicken stock..? I would go mad-it's happened before in restaurants. If I had exact recipes for him I'd have more hope!! This was the one thing that I said to them when we booked it months ago - I wanted a decent dinner.grrr!!

    that's rubbish (the chef that is)! sorry i wasn't sure what you were looking for. there are loads of recipes for various things on the forum, hope you can find some ideas. the chef sounds pretty unimaginative you deserve a decent meal on your wedding day!

    They do sound a bit clueless.

    This is from Rose Elliott originally I think and is more of a Christmas dish but it might be suitable for a wedding. You could tell them what brand of pastry and wine to buy Sorry about the odd formatting.

    CHESTNUT AND RED WINE PATE EN CROUTE

    1 oz vegan margarine
    2 medium size onions, chopped
    2 garlic cloves, crushed
    2 oz button mushrooms, sliced
    3 fl oz red wine
    12 oz can unsweetened chestnut puree or mashed fresh or canned
    chestnuts
    3 oz fresh brown breadcrumbs
    salt and pepper
    1 lb puff pastry (frozen will do, check it's free of noxious
    substances)

    Melt margarine in a largeish saucepan, add onions and fry about 10
    minutes until tender. Add garlic and mushrooms, and cook for 2 or
    3 more minutes. Addd wine and simmer for a minute or two until
    most of the liquid has evaporated. Remove from heat, add chestnut
    puree, breadcrumbs and salt and pepper. Mix well.

    Heat oven to 230C/450F/Gas mark 8. Roll out the pastry on a
    floured board into 2 strips, one 6"x12" and one 9"x12". Put the
    smaller strip on to a baking sheet which you've brushed with
    cold water. Spoon chestnut mixture on to the pastry in a rough
    loaf shape, leaving a half-inch margin. Brush the margin with
    cold water, then gently put the second piece of pastry on
    top. Press down lightly around the edges and trim. Use the
    trimmings to decorate the top. Make a few
    small holes to let the steam out.

    Bake for 7-8 minutes, lower heat to 200C/400F/Gas mark 6, and
    bake for 20-25 minutes more.

    They are useless, I got something very similar on my sisters wedding day - in fact my meal was totally inedible and FOR PETES SAKE CAN THEY THINK OF NOTHING BETTER THAN FRUUUUIIIIT!!!! *head explodes*

    Thanks to all!! Think I'll flick through my cookbooks and see bring a few recipes along to the chef on friday.... I am not impressed at all but not surprised either... I told them I was a foodie!!! Might have to turn into bridezilla to get a decent dinner!! I've been really laid back about the whole thing...but don't mess with my belly!!! Will let you all know how it goes...in the meantime keep those ideas coming!

    I read in "Living with meat eaters" that the author served walnut balls at her wedding and everyone thought they were meatballs! A nice nutball or nut loaf recipe with some good side dishes (mmm mashed potatoes ) would probably be pretty easy for the staff to make for you. I'll try to find a recipe to post here.

    Congratulations - hope you have a wonderful, sparkling day.

    As you are into gourmet food, have you seen The Millennium restaurant's cookbooks? they are full of amazingly good looking food. Some are really confaluted, but lots are easy to do at home, so should be no problem for an hotel. There are two books, one called Millennium Cookbook and the other The Artful Vegan - see if your library has/can get them for you.

    I can't believe they suggested stir fry for your wedding meal! Did they offer you a massive discount on their usual wedding rate to go with that? No, thought not!
