This recipe is actually part of a bigger recipe, from La Dolce Vegan. If you have that cookbook, it's the chocolate sauce from "Mama Mayhem's Perfectly Easy No-Bake Cookies" on page 220. I made these today, and they were sooo good! But before I added the oatmeal, I took a taste of the sauce, and I couldn't believe how good it was. Like hot fudge sauce but with a nutty taste to it. So here's the recipe for those who don't have this cookbook:
1/2 cup sugar
1/2 tsp vanilla
1/4 cup vegan milk
1/4 cup nut butter (your choice)
1/4 cup vegan margarine
2 tsp unsweetened cocoa powder
1 cup walnuts, finely chopped
Put all ingredients except the walnuts into a small saucepan and melt on medium low until the sugar is dissolved. Remove from heat and stir in walnuts. (The complete recipe then says to then add 1.5 cups of oatmeal, and drop by large spoonfuls on a cookie sheet lined with wax paper, then refrigerate for one hour).
The cookies were really good, but the sauce by itself was fantastic. I made it with macadamia nut butter, but I bet it would be just as good with any nut butter. I made more sauce tonight, and drizzled it over a bowl full of sliced bananas. I'd LOVE to get a hold of some vegan marshmallows to dip into it as well. Sooo good!
