MASALA BEANS WITH FENUGREEK
1 onion
1t ground cumin
1t ground coriander
1t sesame seeds
1t chili powder
1/2t crushed garlic
1/4t ground turmeric
1t salt
2T vegetable oil
1 tomato, quartered
1 1/2c green beans, blanched
1 bunch fenugreek leaves, stems discarded
4T chopped fresh cilantro
1T lemon juice
roughly chop the onion. mix together the cumin and coriander, sesame seeds, chili powder, garlic, turmeric and salt.
put the chopped onion and spice mixture into a food processor or blender and process 30-45 seconds, until you have a rough paste. in a large pan heat the oil over a medium heat and fry the spice paste for about 5 minutes, stirring the mixture occasionally. add the tomato, green beans, fenugreek and cilantro. stir-fry the contents of the pan for about 5 minutes, then sprinkle in the lemon juice and serve.
