This one is easy. Take a wok and fry up some tofu till golden brown. Set aside.
In the same wok toss in long slices of green and red pepper, pineapple and stir fry for a bit.
Now add peanut sauce. I usually take a can of cocunut milk, 1-2 tbsp of red curry paste, and maybe 1/2 cup of peanut butter and mix in a sauce pan over medium heat with a whisk. Once I make it I taste it and add more peanut butter or red curry to taste if needed.
After a while throw in some drained black beans and let the mixture simmer until the beans are soft.
Now throw in the Tofu and mix well. Wrap up the mixture in a large burrito shell and if you want wrap the burrito in foil and put in the oven on some low temp to keep warm. I usually throw the burrito shells on a hot pan to heat them up rather than the microwave and it makes a difference.
I serve the burritos with large orange slices on the side. My carniverous parents love this dish and request it everytime that I visit them.
