I will not eat anything that walks, swims, flies, runs, skips, hops or crawls.

No, I'm lazy and usually microwave a frozen one. In saying that though, I have made a sweet potato & black bean burrito a couple of times. I'm 99% sure it was from the La Dolce Vegan cookbook.

I like Amy's blackbean - but for me, home made is much tastier than frozen ones

Homemade are better, but Amy's are good. I think I like the plain non-dairy one better with pinto beans than the black bean ones.
I normally would make burritos, but my boyfriend and I made tacos the other night that were actually delicious. (He hadn't had tacos in like 10 years and wanted to try them).
We just got hard taco shells, refried black beans with jalapenos, lettuce, tomato, avocado, salsa, and chipolte tabasco. They were so good. We also made spanish rice with black beans and diced tomatoes. Yum yum.
I ended up crunching mine up though and making a taco salad.

Sweet potato burritos!!!!! I make them a few times a month!!! I actually just posted the recipe on my blog- I found a similar one on AllRecipes.com a while back and just changed a few things to make it vegan and faster.... I'm all about the quick route to burritos. They're mainly a spicy bean mixture (kind of like smashed or refried beans but better), tomatoes, sweet potatoes, and vegan sour cream. Mmmmmmm..

I'd normally just fry loads of veg and whatever tin of beans I have lying around with some fajita spice mix, I find it's a good way to sneak some spinach into my diet too. Put some tomatoes or salsa on the table, and even my meat-eating friends love it! It's the simplest meal and only takes about 20 mins to make.
